Warm French Onion Soup Hummus Dip

Getting tired of the standard, plain-old-Jane hummus flavours you see in your grocery store? As a hummus enthusiast, we don’t blame you. That’s why making your own can allow you to get creative and put your own spin on it, say with this French onion soup inspired recipe. If you’ve never made hummus before, don’t fret – it’s easy, painless and inexpensive. For best results, make sure you are readily equipped with your favourite dipping item and the hummus is served slightly warmed, to really bring together all that delicious taste.
Makes: 2.5 cups of hummus

Ingredients:
- 1 can chickpeas, rinsed and drained
- 3 tablespoon extra virgin olive oil + 1 tablespoon for sautéing
- ½ teaspoon thyme leaves
- 2 yellow onions, sliced
- 2 tablespoon cashini butter (a nut butter made from cashews and sesame seeds)
- ¼ cup non-dairy mozzarella cheese
- 2 garlic cloves, minced
- 1 tablespoon onion soup mix
- freshly ground pepper, to taste
- ½ cup filtered water
- ½ teaspoon herbamare (a seasoning available in most health food and grocery stores)
Directions:
- Preheat oven to 375F and set aside a 3-cup casserole dish.
- Melt your sautéing olive oil in a pan on medium heat, carefully adding your chopped garlic and onions. To ensure they don’t burn, stir every few minutes. Onions should be translucent and ready after 10 minutes.
- In between watching your mixture sauté, measure out and combine all remaining ingredients (except the cheese) into a blender or a food processor
- Now that your onions and garlic are done, add them to your mixer of choice and blend/chop until all ingredients are smooth and well-mixed.
- Using a spatula, we don’t want to leave any delicious mixture behind, scrap the contents out and into your casserole dish. Top with cheese and place uncovered in oven to bake. Over the next 15 minutes be sure to check on your dish to ensure the top doesn’t burn.
- For the last five minutes you can set your oven to a low broil to ensure the top of the cheese is the perfect amount of gooeyness. Once finished, remove from oven and begin the cool down process before serving.
Make It This Way
You can make this recipe even healthier by replacing the store bought soup mixture for a homemade one instead. Store bought, prepackaged onion soup mixes contain added MSG, sugars and preservatives that should be avoided. You can also make this recipe vegan by using a homemade onion soup mix recipe that skips the beef bouillon.
Vegan Homemade Onion Soup Mix:
Blend these ingredients together and store in a glass jar.
- ½ cup dried onions
- 2 tbsp dried parsley
- 5 tbsp onion powder
- ½ tsp celery seed
- ½ tsp fresh ground black pepper
- 2 tsp tumeric
- 2 tsp sea salt
- 3 tsp garlic powder
Try This
This recipe is best served with fresh, cut up, raw veggies. You can also try it as a spread in a wrap as a replaced to mayo or mixed in to your mashed potatoes for an added taste.
