Erythritol sweetener is a naturally-occurring organic compound of sugar alcohol (or polyol) that is widely used as a sugar substitute. Small quantities can be naturally found in fruits and mushrooms and can also be made from corn using enzymes and fermentation. Erythritol cannot be metabolized by the body and is the sugar substitute with the lowest calorie content of all sugar alcohols. In fact, erythritol is 60–70% as sweet as sucrose (or table sugar) however, it is almost completely noncaloric and does not affect blood sugar or cause tooth decay; therefore, it is a great option for those who need or want to monitor their blood sugar levels.
Erythritol has a fresh, pleasant sweetness profile that’s similar to table sugar (sucrose) with a slight acidic and bitter taste but no detectable aftertaste. It may be purchased in crystals and granules, liquids and powders, making it easy to mix in with coffee, tea or use in baking. Making the Most out of your Erythritol Sweetener
When selecting your erythritol, make sure to read the labels carefully to ensure your product of choice is not genetically modified (GMO). This is important because a lot of the current erythritol on the market is derived from cornstarch from genetically modified corn, which has been linked to infertility, immune dysfunction, insulin deregulation, gastrointestinal problems, and many more.
