Apple Crumble Breakfast Bake

We know what you’re thinking; apple crumble first thing in the morning, we can’t possibly be serious. Thankfully there are two things we don’t joke about – your health and breakfast. Starting the day off right is half the battle and this recipe will transform your mornings from okay to unbelievable, so what are you waiting for, its time to get started.

Ingredients:

| ¾ cup water | ¼ cup millet | ½ teaspoon maple extract |
| ½ cup apple juice | 1 tablespoon amaranth | pinch nutmeg |
| 1 apple, diced | 1 teaspoon pure vanilla extract | pinch ginger |
| 4 medjool dates, pitted | 1 teaspoon ground cinnamon |

| ¼ cup walnuts, chopped | 1 tablespoon coconut oil, melted | |
| 2 tablespoons almond flour | 1 tablespoon coconut sugar |
Directions
- Turn the oven to 350 F
- Measure out and combine the following ingredients into a blender: water, apple juice, maple extract, vanilla, cinnamon, nutmeg and ginger. Blend ingredients for 1-2 minutes, until smooth. Once it’s reached the proper consistency, poor mixture into a casserole dish.
- Combine the remaining ingredients; diced apples, amaranth and millet into the casserole dish. For best results, cover and cook for 80-90 minutes, or to ensure the casserole is done and ready for eating, most of the liquid should have disappeared and the grains will be fully cooked.
- In the meantime, you should start prepping the crumble for on top of the dish into a bowl.
- Roughly 10 minutes before the casserole is finished baking, remove the cover and add the crumble to the top and return back to the oven for its final bake.
- Allow the casserole to sit and cool a little before serving.
