Beet + Goat Cheese Spread

Never get accused of eating boring food again, with this pop of pink beet and goat cheese spread! It’s a healthy, savory treat that can be used multiple ways while still allowing you to indulge in your cheese-y addiction. Use this as a great way to spruce up your raw veggies by eating it as a dip, make a colourful toastie and top it with some avocado, spice up your regular chicken sandwich by using it as a spread, or mix a little in with some warm bowl of quinoa with some fresh herbs. If you provide the great ideas, it will provide the taste!

Ingredients:
| ¾ cup raw nuts or seeds | 3 beets, peeled and chopped | 2 garlic cloves |
| 2 tablespoon extra-virgin olive oil, divided | ¼ cup fresh dill | ¼ cup lemon juice, fresh |
| ¾ cup mozzarella goat cheese | ¼ cup fresh parsley | dash of sea salt |
Directions
- For density, we need to turn your nuts/seeds into a paste. Add them with 1 tablespoon of your olive oil into a food processor. Blend until smooth. Once complete, transfer to a bowl. Quickly clean your food processor, because we are going to need it again!
- In the same bowl as your paste, add in your goat cheese. Stir well to ensure everything is mixed together.
- Prepare your beets by peeling and cutting them in to smaller pieces. Transfer from your cutting board to your food processor, and mix in the dill, parsley, garlic and your final tablespoon of oil. Blend for 30 seconds. Slowly add in your lemon juice and salt. For best results, you will want to make sure the beets are no longer in chunks, but your parsley isn’t too chopped that you can’t see it!
- Transfer your pink mixture to the bowl with your paste and stir until thoroughly mixed.
- Serve right away, or refrigerate until ready.
Make It This Way
For a lighter taste, try swapping out olive oil for grapeseed oil. Get creative with your choice of nuts/seeds. We would highly recommend using walnuts for an extra boost of omega-3s, or if you prefer seeds, flax or sunflower seeds.
If you are not a fan of dill, basil would also add a great, refreshing taste to this spread.
