Chickpea Lemon Salad Dressing

If you’re a hummus connoisseur, you’re absolutely going to love this salad dressing. It’s only natural that someone would take a delicious hummus dip and turn it into a sauce, and the only thing we can say about that is – why hasn’t it happened sooner! This dressing provides a great protein boost to your greens, and is another great way you can spruce up your salad in only minutes!

Ingredients:
| ¼ cup extra virgin olive oil | 1/3 cup raw tahini | ¼ teaspoon toasted sesame oil |
| ½ cup chickpea flour | 1 tablespoon white vinegar | ¼ teaspoon salt |
| 1/3 cup + 1 tablespoon water | 3 cloves garlic | pinch chili flakes |
| ½ cup lemon juice | ½ teaspoon cumin |
Directions
- Using a blender or food processor, measure all ingredients out and blend until smooth. Tip: If the dressing seems to thick, try adding a teaspoon of water to help it blend.
- Drizzle over salads, or store the fridge for up to a week.
Make It This Way
To make this dressing a little more flavourful, you can substitute apple cider vinegar for the white vinegar.
It’s hard to have every type of flour on hand, so you can always substitute almond, tapioca or buckwheat flour instead of chickpea flour – although the tastes will work best for the dressing.
