Cinnamon Almond Stars

Ever have a craving for cookies, or to realize you don’t have half the ingredients in your cupboard? Well, with only five ingredients in this list, we are willing to bet you won’t suffer with this frustration ever again! These cinnamon stars are a traditional German Christmas cookie and are typically made with icing sugar, almonds and cinnamon. While they do take a while to bake, the end result is worth it! Instead of icing sugar, this recipe uses coconut palm sugar, which is a low-glycemic sugar, making these cinnamon stars healthier.

Ingredients:
| ¾ cup palm sugar ground | ¾ teaspoon ground cinnamon | 1 teaspoon lemon zest |
| 2 cups ground almonds | 2 egg whites |
Directions
Preheat oven to 200F
- In a bowl, measure out half of your palm sugar, almonds and cinnamon. Mix well and set aside.
- In another bowl, whisk together your two egg whites. Once there is plenty of foam, mix in your remaining palm sugar and the fresh lemon zest. Mix well.
- Now, combine both mixtures together into one bowl. It will start to form a sticky dough.
- After dough is thoroughly mixed, divide into three sections. Take one section and place it on a sheet of parchment paper, and roll it out to ¼ thick, using extra ground almonds if needed to help roll out the dough properly.
- Now that your dough is rolled out, take your cookie cutter and make your cookies. Gently lifting them up after they’re cut and placing them onto a lined baking sheet – leaving space between each one as they bake. Repeat until all the dough is gone.
- Toss your cookies in the oven and bake for 30-35 minutes, or until they start to turn a light golden brown.
- Allow the cookies to cool before eating or serving!

I can't believe how simple it is to make these cinnamon almond star cookies and I love how the ingredients are just as simple and not very many! I really am all about those baked goods that are few ingredients over the ones that require about a million different ingredients that you have to go running around for so this is really a great recipe to have on hand for when you want a delicious cookie last minute!

What a great recipe! I love how there are only five ingredients (personally, for me your site has the best minimal ingredient recipes of all the different recipe websites I visit, which is saying something because I like to have new recipe inspiration so I subscribe to various cooking magazines & visit specifically cooking websites at least once a week. I think that I will be sharing this with my Mum (of course, haha, like a god Mum she makes delicious cookies). As this seems like something I might enjoy making myself too, can I ask: is there a substitution that you would recommend to make this vegan friendly?
