Coconut French Toast

If you’re staring at the last few slices of gluten-free bread and your empty nut butter jar wondering what you’re going to do for breakfast– don’t fret; we’ve got just the solution! This coconut French toast with its tropical topping adds a lovely crunch to your new quick-fix breakfast. In just under 15 minutes, you'll have a wonderful meal that has 14 grams of protein, 3.5 grams of fiber and only 2.8 grams of natural sugars per serving. Say hello to your energy boost for the morning!

Ingredients:
| 2 whole eggs | ¼ cup lite coconut milk | ¼ cup unsweetened shredded coconut |
| 2 slices of gluten-free bread | ½ teaspoon ground cinnamon + more for sprinkling | pinch stevia |
Directions
Preheat oven to 350F
- In a bowl, whisk together your eggs, milk, cinnamon and stevia.
- One slice at a time, dip a piece of gluten-free bread into the egg mixture – making sure to fully coat each side. Note: if you like soggier French toast, place both pieces in at a time, and let them sit in there for a few minutes before flipping.
- Once done, place on a baking sheet and top both slices with the shredded coconut and sprinkle with extra cinnamon.
- Bake in the oven for roughly 10 minutes, or until the egg has fully baked and you get a light brown colour on the toast. Serve hot!
