Crock-Pot Apple Chia Pudding

If you only thought crockpots were for cooking dinner, we’re here to prove you wrong! While combining the goodness of chia seeds and the sweetness of apples, this high-fiber breakfast provides a nice alternative to oatmeal. We know you’re a busy person, so while it’s cooking you’ll have time to clean the house, wash the car, get the groceries and have a tea break – who doesn’t love productive mornings followed by a wholesome breakfast you didn’t have to cook!

Ingredients:

| 1 cup non-dairy milk | ½ cup chia seeds | pinch salt |
| 2 cups water | 2 tablespoon arrowroot powder | 5 large apples, sliced |
| 2 tablespoon maple syrup | 1 teaspoon ground cinnamon |

| ½ cup blanched almond flour | ¼ cup coconut sugar | ¼ cup unsweetened apple sauce |
| ¼ cup unsweetened shredded coconut | 1 teaspoon cinnamon | 1 teaspoon pure vanilla extract |
Directions
- In your crockpot, measure out your milk, water, maple syrup, chia, cinnamon and a tiny bit of salt.
- Gently, without mixing everything together, place your apple slices on top of the mixture – you are going for a nice layered affect.
- In a large bowl, combine all of your topping ingredients together and mix thoroughly. Once combined, use your hands to sprinkle the topping and coat the apples.
- For best results, cook on a low setting for four hours, however if you’re in a bit of a time crunch, you can cook it on high in only half the time.
- Before serving, allow the dish to sit in the crockpot, covered with no heat for nearly an hour. Sprinkle with raisins or walnuts if you desire, and serve warm!
Make It This Way
Instead of arrowroot to thicken the pudding slightly, you could use cornstarch, potato starch or tapioca starch. Corn and potato are non-paleo ingredients, so stick to arrowroot or tapioca if you are following a paleo strict diet.
Try This
Why not try serving this dish piping hot, and use some ice-cold almond-milk to top it. It will give it a creamy taste and a cooling aspect without all the guilt!
