Gluten-free Oatmeal Raisin Cookies

With all the endless, wild cookie options out there, sometimes it’s nice to slow things down and just go back to the basics. Well, thankfully we’ve got just the thing - oatmeal raisin cookies just like grandma used to make! Only these cookies have had a bit of a facelift – we’ve not only taken out the gluten, dairy, eggs and nuts in this healthy version, it’s also free of ingredients that cause inflammation. So grab that old, flower-pattern apron, put on a record and get baking – unlike these cookies, some things don’t need updating!

Ingredients:

| 1 ½ cups gluten-free old-fashioned oats | ¾ cup of raisins, soaked |
Directions
Preheat oven to 350F
- In a small bowl, prepare your egg by mixing 1 tablespoon of flax seed with 3 tablespoons of warm water. Set aside for five minutes.
- In another bowl, add some water and dump in your raisins. Let them plump up for five minutes in the water. Then drain and set aside.
- To ensure you have smooth cookies, mix your oil, brown sugar, egg and vanilla in a large bowl and cream together. Mix until nice and creamy – if you want to speed the process up, use an electric hand mixer.
- Using another bowl, combine all of your dry ingredients. Mixing thoroughly.
- Now, combine both mixtures into one bowl, stirring. Once well incorporated, add in your drained raisins, and oats if you’re adding them.
- Using your hands or a spoon, portion out the cookies onto a lined baking sheet, making sure to leave enough space between each one for expansion.
- Toss the cookies in the oven and bake until golden brown, around the 10-12 minute mark.
Make It This Way
To make a perfect, soft-on-the-inside cookie every time, creaming the coconut oil and sugar is a key step. This process takes roughly three minutes, and it works because it beats in tiny air bubbles, resulting in a fluffy texture. Just make sure you don’t over do it, or you could beat the air bubbles out as fast as you beat them in!

Make the perfect yogurt parfait by mixing this cookie with goat yogurt and fresh berries! For best results, crumble two oatmeal raisin cookies into the bottom of a clear cup or a glass. Next, add a few dollops of plain goat yogurt or dairy-free yogurt. Top with fresh, chopped berries, then drizzle with a little maple syrup or honey and enjoy.
