Ingredients:
| 3 large russet potatoes or baking potatoes | 2 tablespoon coconut oil | dash of coarse sea salt |
| cold water | 1 large egg white, whipped |
Directions
Preheat oven to 425F
- Give your potatoes a quick scrub under cold water. Then, using a sharp knife, cut potatoes into fry shapes and place in a large bowl. Allow the fries to soak, by filling up the bowl with cold water and setting aside.
- While you’re waiting for your fries to soak and your oven to heat, take your coconut oil and grease a baking sheet. Lightly sprinkle some sea salt on the bottom and set aside.
- In a small bowl, whisk you egg whites until frothy. Set aside.
- Drain your potatoes after roughly ten minutes and dry with a cloth or paper towel. Once dry, put the fries back into the dried bowl and pour in your egg white mixture. Using a spoon or your bowl jerking skills, make sure all the contents are evenly coated.
- Gently lay the fries onto your coated baking sheet, making sure they are flat and evenly spread – if they aren’t touching each other, even better.
- Bake in the oven for 30-35 minutes, flipping once at the half waypoint.
- Once they are golden brown, remove from the oven and sprinkle on some more sea salt. Serve hot!
Make It This Way
You can make this recipe egg-free and vegan if you replace the egg white for ½ teaspoon of arrowroot (making sure to evenly coat the fries!).
For added taste, use a seasoning salt or herb to toss in with the fries.

Serve with a veggie burger or as a great treat to enjoy homemade chicken fingers! Kids will love the idea, and you will enjoy the healthier recipe knowing they weren’t fried.

Who doesn't love french fries?! They are so delicious especially when they are the perfect mix of crispy and chewy, it is so much healthier to make them by yourself and when you stop and think of it it really is not that complicated to do at all! This recipe is such a great one to show you how to make them! I never would have thought to use egg whites either and its nice to know its optional if you want to make it vegan too!
Hello,
Indeed, making your own fries can be much healthier, especially if you bake them or have an air fryer. You can also sprinkle any seasoning you'd like on them to give it an extra kick.
Enjoy!
If you're going to have fries, this is sure the way to have them! It is good to use a high saturated fat oil for cooking with hear given the stability of saturated fats (they will form limited oxidation products and advanced glycation end products). I like that this recipe is simple and includes real-food ingredients. Also, I am very happy that you note to use coarse sea salt as this will add to the texture & flavor and, importantly, it is an unrefined salt, which is healthier for the body!
Hello Rachel,
Indeed, making your own French fries is the healthier option and you can season them with high quality spices and seasonings or Celtic salt. Have a read about the benefits of Celtic salt here: https://www.nationalnutrition.ca/articles/research/himalayan-salt-vs-sea-salt-discover-the-differences/
