Quick and Easy Breakfast Bowl

In only five minutes you'll turn your pesky leftovers into a warm and comforting breakfast that’s full of protein and fiber to kick-start your day. With only one simple step, and two different ways to make it, you’ll find yourself making extra grains on purpose just so you can have a hearty breakfast – and there’s nothing wrong with that!

Ingredients:
| ½ cup cooked millet or leftover grain | 1 tablespoon dried currants or raisins | 1 teaspoon coconut oil |
| ½ cup non-dairy milk | 1 tablespoon shredded unsweetened coconut | ¼ teaspoon ground cinnamon |
| ¼ apple, diced | ½ tablespoon maple syrup, or honey | |
| 1 tablespoon chia seed | ½ tablespoon coconut butter |
Directions
- Whether you’re cooking this on a stovetop or in a microwave, bring all the ingredients together in either a bowl or a saucepan, mix and bring contents to either a light boil and reduce to a simmer, or turn on the microwave for two minutes.
- Serve hot!
Make It This Way
This recipe is perfect for using leftover grains. It works with quinoa, rice, amaranth or any other left over grain in your refrigerator. Leftover grains can last up to three days in the fridge, so be resourceful and use them up before you have to toss them! You can also use any fruit or dried fruit you have on hand – get creative!

I am on the hunt for new breakfast recipes and I love how this one is a zero waste one that can be used with leftovers! It is always hard when you have eaten the same leftovers a few days in a row so I love how this recipe spices up those leftovers and makes them into something completely new! Breakfast bowls are so delicious and as you said, fairly quick to make. When you eat a nutritious meal in the morning, you're providing your body with many nutrients it needs to start the day off strong.

This is a classic late summer or fall/winter hearty grain bowl-solid staple! I will have to share it with my father because he is the OG of awesome oats to start the day. I love the addition of currants and shredded coconut to the recipe too in order to add a sense of freshness and brightness to this recipe.
