Raw Goji Buckwheat Bars

For those just getting into the sprouting mindset, here is your first tasty challenge! While these homemade bars are far from your average Joe’s, but they have a great repertoire when it comes to your health and makes it a great start to your sprouting career. Sample these super food bars off to all your friends with pride and discuss the finer things in life as you enjoy them, such as how goji berries are delicious when paired with a chocolate counterpart… or something like that!

Ingredients:
| 1 cup medjool dates, pitted [about 14] | ½ cup unsweetened shredded coconut | 2 teaspoons pure vanilla extract |
| 1/3 cup almond meal | ¼ cup goji berries | 1 teaspoon cinnamon |
| ½ cup raw buckwheat grouts, sprouted [yield: 1 cup sprouted] | ¼ cup carob/chocolate chunks | pinch of salt |
Directions
To sprout buckwheat: Grab a glass container (one that has a lid) and fill it with water – place raw buckwheat sprouts and immerse them in water. Seal with a lid and put it in the fridge overnight to soak. The next morning drain and rinse the sprouts, then with the sprouts still inside, tip the container upside down onto a kitchen towel. Allow them to sit for 1 hour to ensure all the water is drained off them. Next, lip the sprouts and bowl right side up and leave on the counter for 24 hours. Around the halfway mark [12 hours or so], fill the bowl with water again and continue to leave it on the counter. At the end of the 24-hour mark, your buckwheat should be ready. Your final step is to spread them out on a kitchen towel again to remove any excess moisture.
Making the Bars
- Place all ingredients except your goji berries and carob chunks into a food processor and blend until you feel like everything is properly mixed.
- Place contents in a bowl and stir in the goji berries and carob chunks.
- Grab a 9x9 baking pan and line with parchment paper or silicon-baking mat, press the mixture firmly into pan.
- Don’t have a dehydrator: Place pan in the freezer for over an hour, allowing them to harden. Once they are firm, you can cut them into squares and enjoy at room temperature or right from the freezer! Using a dehydrator: Still place the pan in the freezer for 10-20 minutes so the mixture can set before you cut them into squares. Dry the cut squares at 115F for 8-10 hours and enjoy!
Make It This Way
Don’t panic, if you don’t have your almond meal you can easily make your own. To make, simply pulse ½ cup of almonds in your food processor until they are broken down, but not as fine as flour.

I love how goji berries can make any recipe taste more soft and chewy, that's why these healthy raw goji buckwheat bars are such a great combination! I love how it mixes a bunch of healthy ingredients and I did not realize that you could sprout your own buckwheat which is really cool and must be more cost effective too, this is a great idea for a quick and healthy snack or treat! Thank you for your feedback. Goji berries are a great superfruit that packs many antioxidants and are delicious and chewy like you mentioned. They really are the star of this recipe.
I agree with O that it is absolutely wonderful how goji berries can add softness as well as chewiness to any recipe and can also make for some great combinations. Also, as to O's comment about sprouting buckwheat it is funny but I also think I have to try that: I am a big fan of buckwheat and love to make my own yogurt since the fermentation is in a way a relaxed craft and helps build health and flavor. I can only imagine how sprouting (not fermenting but still a process) migh enrich the natural flavor of buckwheat as well as its health benefits too.
