Sugar-Free Apple Pie Cookies

These chewy and tender cookies are sure to please any apple pie lover. Not only are they simply delicious, they are also 100 percent sugar-free – but don’t worry, the natural sweetness from the bananas and dates help curb your sweet tooth! For an added health bonus, leave the peel on the apples for even more fiber and antioxidants!

Ingredients:
| 2 unpeeled apples, diced | ¾ cup quinoa flakes | pinch of nutmeg |
| ¼ cup apple juice | ½ cup chopped walnuts | 1 teaspoon pure vanilla extract |
| 1 tablespoon fresh lemon juice | ¼ teaspoon salt | ¼ cup almond milk |
| 2 teaspoons ground cinnamon | ½ teaspoon baking soda | 1 ripe medium banana |
| 1 cup almond flour | 2 teaspoon ground cinnamon | 8 medjool dates |
Directions
Set your oven for 350F
- Over medium heat, bring your apples, lemon juice, apple juice and 2 teaspoons of cinnamon to a little boil. Reduce heat to a simmer and cook for 5-10 minutes. Remove from heat and set aside to cool.
- In a large bowl, combine your flour, quinoa flakes, walnuts, salt, baking soda, nutmeg and remaining cinnamon. Whisk to combine.
- In a blender, blend your vanilla, almond milk, banana and dates until smooth.
- Combine your dry and wet mixtures together into one bowl, making sure to mix regularly to ensure there are no clumps.
- Using a spoon, portion the cookies out and place onto a lined baking sheet.
- Bake cookies in the oven for 25-30 minutes, or until golden brown. Serve warm or place in an airtight container!
Make It This Way
If you don't have quinoa flakes on hand, you can substitute them with gluten-free quick cooking oats instead. Do this by pulsing the oats a few times in a food processor to make them closer to the consistency of quinoa flakes – just make sure you don’t over do it and turn it into flour!

This recipe is a nice variation on the wholesome cookie trope that is typically reserved for oatmeal. I like the idea of having another healthy, hearty cookie option! I am personally not a fan of apple, including in baking, but I know quite a few people who would enjoy this recipe, so I will be sharing. I love the variety of the ingredients that you suggest using and like the idea of the quinoa flakes especially-I have never used them before but been wanting to and this gives me some inspiration for how to use them :)
