Twice as Nice Sweet Potato Hash

Move over greasy hash browns, there’s a new breakfast side dish in town! This perfectly sautéed hash will curb your cravings for savory and sweet by combining both of your favourite potatoes into one dish! We love the taste and lightness of using coconut oil for cooking, and your waistline and wallet will thank you for choosing home made over your regular weekend diner dish. With complementing spices, this has will pair great with your favourite style eggs on any day ending in ‘y’.

Ingredients:
| 2 teaspoon extra-virgin coconut oil | 1 small white potato, cubed | 1/8 teaspoon dried basil |
| ½ cup diced red onion | ¼ teaspoon dried thyme leaves | freshly ground pepper, to taste |
| 2 garlic cloves, roughly chopped | ¼ teaspoon dried oregano | |
| 1 small sweet potato, cubed | ¼ teaspoon sea salt |
Directions
- In a large frying pan or cast iron pan over medium-high heat, heat your coconut oil.
- Once heated, toss in your garlic and onion so it can lightly sauté. Stir this mixture regularly to avoid burning.
- After roughly three minutes, turn your burner to medium-low and add in all of your remaining ingredients. Mix together and cover.
- Once your potatoes are easily poked with a fork (no one likes eating undercooked potatoes!), sprinkle with salt and pepper and serve hot!

Yum! I love sweet potatoes and I also love potato hash so this is a great combination! I sometimes eat this for dinner as well as breakfast because it is so good and filling! I definitely favour sweet potatoes but any potato will do really. I enjoy adding chives to my potatoes and I have found them freeze dried before so it is easy to add to any recipe and really elevates the flavours too! I would recommend that as well if you love chives too :)!

I love the addition of a small white potato to this recipe because both sweet potatos and classic or traditional potatoes (which are technically different species!) have very different flavor & texture profiles but I find them to be complimentary. I love that this recipe uses a variety of aromatics and herbs in order to accomplish a savory and full flavor profile. I have not made a hash in quite a while so perhaps I will have to try this one. Thank you for another great recipe idea, NN!
