Two-Way Apple Pie Cups

We bet you’ve never seen an apple pie served inside an apple before! Its’ not only creative and sure to impress your guests, but its healthy too! We call this two-way apple pie cups because you have two ways of cooking them. You can either grill them on the barbecue or bake them in the oven, making it a great dish for any season. Now you can benefit from your dessert because these apples provide plenty of fiber, not to mention they’re low in fat and are free of refined sugars and common allergens – plus, who doesn’t love apple pie!

Ingredients:

| 6 apples | 1 tablespoon ground cinnamon | 2 teaspoon maple syrup |
| 2 tablespoon soy-free earth balance spread | 1 tablespoon palm sugar |

| 1/3 cup + 2 tablespoon white rice flour | ¼ cup arrowroot starch | dash himalayan rock salt |
| 1/3 cup + 2 tablespoon brown rice flour | 2 tablespoon freshly ground flax seed | 9 tablespoon soy-free earth balance spread |
| 3 ½ tablespoon potato starch | 1 tablespoon palm sugar | 2-3 tablespoon ice water |
Directions
Crust:
Using a blender or food processor, pulse all of your dry ingredients together. Slowly add in your butter, and mix until you get a light crumble consistency. Then, slowly continue adding your water, with the machine still running. This shouldn’t take more than a minute. Form the dough into a ball, cover in saran wrap and place in the fridge for an hour.
Apples: Prepare your apples by cutting them in half, and scooping the inside seeds and core out. Place apples cut side up onto a baking sheet. In a small bowl, combine your cinnamon, sugar, syrup and butter together and mix until well incorporated. Spoon mixture into the apples, and set aside.
Creating Apple Cups: Take roughly 2-3 tablespoons of your cold crust and roll it into a ball. Squish the dough over top of the crumble and flatten out to the edges. Repeat until all apples are covered!
Cooking
BBQ: Cover the apples in foil and grill for roughly 30 minutes. Oven: Keep on your baking sheet and bake at 350F for 25-30 minutes.
Make It This Way
If you love nuts in your apple pie, then add in a ¼ cup of nuts (walnuts or pecans work great) into the apple mixture that go inside the apple. Just remember that if you add nuts, the recipe is no longer nut-free.

These are delicious and the perfect size dessert or snack! You can also freeze them to have more on hand. Much better than baking a whole pie.

I like the cup idea-it's a cute mini variation on a bread bowl/stufed squash. And. I like the two-way nature of this recipe: baking apple versus grilling apples grants the apple a very different flavor (both good I must say) so that is an awesome little detail as well. What sort of apples would you say is best for this recipe, NN? There are oh so many diferent kinds of apples out there and I never know which one is right when I am baking with them!
