Multiuse Sweet Potato Curry Sauce
Who doesn’t love walking into an Indian restaurant and breathing in the delicious scents of curry? Not us. We love it so much we decided to take it one step further – by bringing the smell to your home. This sweet potato curry sauce is delicious no matter how you use it: over rice, as a puree, tossed with tofu, salad dressing or as a meat marinade. It won’t compromise your healthy eating patterns, it won’t disappoint in taste and trust us, the colour spruces up any meal.
Serves 4-6
-Gluten Free -Dairy Free -Corn Free -Egg Free -Vegetarian
Ingredients:
- 1 cup raw sweet potato, cubed
- 1 cup coconut milk, unsweetened
- 2 tablespoons fresh cilantro, finely chopped
- ½ cup red onion, sliced
- 2 tablespoons lemon juice
- 1 teaspoon fresh mint, finely chopped
- 2 cloves garlic
- 1 tablespoon curry powder
- 1 tablespoon grapeseed oil
- 1/8 teaspoon sea salt
Directions:
- Preheat oven to 400F
- With your knife and cutting board, cut up your onion and sweet potato – toss in some oil and add in your minced garlic. Spread mixture over a baking sheet and roast in the oven until the potatoes are tender – 20 minutes or so.
- Meanwhile, in a blender add in your coconut milk, water, lemon juice and all of the spices. Blend until well incorporated.
- Once your vegetables are roasted, toss them in the blender and blend until smooth.
- Last but not least, stir in your fresh cilantro and mint – now, the tricky part, how are you going to use the sauce?
Try This:
If you’d like to use this sauce as a marinate place all ingredients in a Ziploc bag and for best results, refrigerate overnight. Freeze marinade and take it out as you need it for salads, vegetables or anything else you can come up with!
