Rosemary & Thyme Gluten-Free Crackers
Snackers, look no further! These savory crackers are going to take your daytime, nighttime or anytime snack to the next level. With a perfect combination of fresh herbs and just the right amount of saltiness, these multigrain crackers will be great paired with hummus, cheese or delicious on their own. They’re easy to make, vegan, gluten-free and most importantly, delicious.

Ingredients:
- ½ cup almond flour
- 2 tablespoon ground flax seed
- 1 small garlic clove, minced
- ¼ cup sorghum flour
- 2 tablespoon millet flour
- ¼ teaspoon himalayan rock salt + more for sprinkling
- ¼ cup tapioca starch
- ¼ cup earth balance
- 2-4 tablespoon water
- 2 tablespoon teff flour
- 2 fresh rosemary sprigs, chopped
- 2 tablespoon nutritional yeast
- 1 fresh thyme spring, leaves only
Directions:
- Preheat oven to 400F and prep your baking sheet by lining it with parchment paper or a baking mat.
- Toss all ingredients above, except the water, into a bowl and mix with a hand mixer, or if you have one, use a food processor.
- One tablespoon at a time, slowly add the water to the mixture so it produces a dough. As you continue to add the water, you will start to see a firmer dough that is less sticky, and more flakier.
- On a large cutting board, or clean counter top (we’ll let you choose!) toss some flour and roll your dough out using a rolling pin. Shape into a rectangle or square. For perfect cracker thickness, your dough shouldn’t be more than ¼ inch thick – and an insider cracker trick of the trade, the thinner the better.
- Cut crackers into evenly sized squares, and delicately place them on the baking sheet roughly ¼ inch apart. Using a fork, gently poke each cracker and lightly sprinkle with remaining Himalayan rock salt.
- Crackers should take anywhere from 10-13 minutes to bake, depending on the strength of your oven. Be to sure to check them through the glass to ensure they don’t reach more than a light golden brown colour. Place on a cooling rack and let them reach room temperature before serving.
Make It This Way
If you’re not a fan of rosemary, replace it with your favourite fresh herb, either by using more thyme or substituting rosemary with basil or a combination of Italian herbs!
Try This
Are you a good baker, but your knife skills need a little work? Instead of using a knife to cut your crackers (and just crossing your fingers that they turn out into squares), try using a pizza cutter to glide evenly through the dough and create a nice line-edged cracker. You’re welcome!
