Cold Herb and Mustard Salmon Salad

Sometimes you just need an added boast of protein with your greens, and thankfully that’s what you’re going to get with this salmon salad! Long gone are the days when you ate fish out of can, this salad is fresh, and surprisingly just as easy to make. With the added crunch of the veggies, and the delish pairing of Dijon mustard dressing, its great on top of your salad, as a sandwich or on its own!

Ingredients:
| 2 x 8oz. salmon fillets |
| salad | ||

| ½ english cucumber, cut in half lengthwise then sliced | 4 sticks celery, diced | |
| 1 tomato, diced | 2 green onions, finely chopped |
| dressing | ||
|---|---|---|
| 2 tablespoon fresh lemon juice | 1 clove garlic | freshly ground pepper |
| 2 tablespoon extra virgin olive oil | ¾ teaspoon fresh rosemary leaves – about 2 sprigs | chopped parsley |
| 2 tablespoon dijon mustard | ¾ teaspoon fresh thyme leaves – about 4 bunches | |
| 2 tablespoon water | ¼ teaspoon himalayan rock salt |
Directions
Set your oven to broil
- On a pre-lined baking sheet, place your salmon and season with a dash of salt and pepper. Place fish in the oven (middle to high rack) and broil for roughly 5-8 minutes. You will want the salmon to be golden brown on top, and solid in colour as it flakes. Set aside to cool.
- Cut up your salad ingredients and place in a serving bowl. Set aside.
- Using a blender or food processor, bring your dressing ingredients to a smooth blended consistency.
- Now that your salmon is cool, break it up into flakes and place in your serving bowl along side your vegetables. Slowly pour the dressing overtop and toss to coat.
- Enjoy!
Make It This Way
This recipe would work just as well with canned salmon, if you were in a bind – although, fresh is healthier for you.
If Dijon mustard isn’t your ideal flavour, try adding a little bit of natural sweetener, such as honey or maple syrup.

If you’re having trouble with how long to cook your salmon, the recommend broil time is 10 minutes per each inch the salmon is thick!



Salmon is such a healthy meal to go to for great healthy fats and protein so I love finding new recipes that incorporate salmon in a fun new way. Sometimes using the same recipe over and over again can become boring so its great to have options. This cold herb and mustard salmon salad is a great recipe to get in healthy proteins, fats, and more vegetables into your diet at the same time in one convenient meal.

I recently discovered that I enjoy the taste of some mustard in moderation. I get in the mood for it: And I am in the mood for it now! I am also currently on a dill kick and must note that dill is especially good with either rotini pasta or chickpeas (eg things that are soft, chewy, of decent size & with mild flavor). I would love to try a recipe like this and I bet that some tofu with a bit of kelp and sea salt would do ust as good as salmon would here. You've made me hungry and inspired, NN! :)
