Barley grass is simply the young shoots of sprouted barley grain (Hordeum vulgare). It is a nutritious grass that has a nutrient profile that has more similarity to vegetables than to the adult barley grain plant. It is also a fantastic source of essential protein that can help to supplement the diet of vegetarians and vegans alike. Natural health practitioners often recommend barley grass for a variety of conditions, including: ulcerative colitis, anemia, malnutrition, malabsorption, detoxification, and cardiovascular disease.
Vitamin and Mineral Content This sprout contains iron, vitamin C, vitamin B12, vitamin B6, vitamin K and folic acid. It also contains particularly high levels of vitamin B1 (thiamine) and calcium. It is said to have 30 times more vitamin B1 and 11 times more calcium that there is in cow's milk and well as about 7 times the amount of vitamin C in oranges. For years people with arthritis have used celery juice simply because of the amount of organic sodium it contains - 28mg/100g, however barley grass contains 775mg/100g of organic sodium. The enzyme content of barley grass significantly boosts its antioxidant potential, particularly its levels of superoxide dismutase (SOD).

Barley grass is approximately 45% protein. It is a source of complete protein because it contains all of the essential amino acids.
