Cherry LARABAR Rice Pudding

By combining two of your favourite things into one dish, you’ll never suffer from ‘what should I have for breakfast’ syndrome again. While this comfort full is ordinarily full of sugar and dairy, which can wreak havoc on your blood sugars and bowel health, this recipe is the exact opposite. By doing some tweaking, there is now a healthy spin on rice pudding by using dairy-free, high quality, whole-food ingredients topped with a cherry LARABAR sauce. Enjoy as a sweet treat or top it with your favourite superfoods for an energizing breakfast.

Ingredients:

| 1 ¼ cup water | pinch salt | ¼ teaspoon ground cinnamon |
| ¼ cup uncooked jasmine rice | ½ cup non-dairy milk (almond milk works well) | ¼ teaspoon pure vanilla extract |
| ½ cinnamon stick | 1 tablespoon raw honey | 1/8 teaspoon almond extract |

| 1 cherry pie larabar soaked in ¼ cup water | ¼ teaspoon pure vanilla extract |
Directions
- In a large saucepan, bring your water, salt, cinnamon and rice to a boil. Once boiled, lower your heat and simmer. After roughly 20 minutes, your rice should be tender – remove the liquid and place back on the burner.
- Add in your milk, honey, cinnamon, vanilla and almond extract to your rice saucepan and bring this mixture to a boil. Once it’s boiled, lower your heat and keep mixture at a simmer for another 20 minutes. You will want to regularly stir this over the heat, to reduce the sticking and burning.
- Now that your mixture is done, remove the cinnamon stick and set aside on a non-heated surface for now.
- Using a blender, place your sauce ingredients in it and bring to a blend. Process until smooth.
- Serve up your rice pudding into bowls, drizzle over your sauce and serve hot!
Make It This Way
To make this recipe vegan - use maple syrup, raw agave syrup or yacon syrup instead of raw honey.

I love rice pudding and I also love LARABARs they are so delicious and really are such a great snack so combing the two is a genius idea! That is so clever to make the LARABAR into a sauce, and drizzled on top of rice pudding is a great idea, rice pudding already is sweet but only really has one taste so this is a great way to add flavour to your rice puddings while keeping it healthy and avoiding extra sugars!
This is so funny and so equally wholesome! I love that you have a recipe that literally uses Larabar. And, out of all of the flavors that you could choose, you go for the simple and classic cherry Larabar. I would get these all the time back when I was in undergrad and I would share them with my younger Brother (it was his favorite of the most common Larabar varieties). He still enjoys cherry pie larabar, so I will be sending him this recipe :) (thank you for the warm and nourishing bit of nostalgia!)
