Dairy-Free Strawberry Ice Cream

If you’re an ice cream lover, than you’re well aware of the added sugars, and costs associated with your favourite dessert. That’s why we’re here to offer a healthy, cost effective solution that you can make at home! Even better, it’s creamy and loaded with fresh strawberries and just a hint of coconut. It takes only 4 healthy ingredients, your freezer and a little elbow grease to make it, so have fun!

Ingredients:
| 1 16 oz. can of lite coconut milk | ½ teaspoon pure vanilla extract | |
| 1 cup of strawberries | pinch white stevia |
Directions
- Using a blender, pulse all ingredients until smooth and creamy – almost like a milk shake consistency.
- Using shallow, glass containers, divide the ice cream into two. Place both of them in the freezer, covered with saran wrap.
- Check the mixture every 1.5-2 hours, and using a spoon, stir the mixture to keep it from freezing solid. Repeating the process until you get the desired consistency you want.
Make It This Way
If you're not a fan of stevia, then go ahead and substitute it in this recipe with either 4 pitted medjool dates or 2 tablespoons of raw agave nectar and blend with the rest of the ingredients.
Swap out the strawberries for any of your favourite fresh fruit, such as raspberries, mango, blueberries etc.
Try This
Try a scoop of this strawberry ice cream in a cone and topped with toasted coconut ice cream on a hot day!



This makes a very refreshing alternative to dairy ice cream. You could also use mangos or bananas or a combination of all of them. Banana ice cream is very popular. Using frozen bananas makes a very creamy base and since bananas are naturally sweet, you really don't need any sweetener.

It's so great to be able to make your own dairy free ice cream, banana's do make a great base of smoothie bowls or smoothies and adding in other fruit can give it a nice flavour.

Oh my goodness this is such a great idea! This looks delicious! I am a huge ice-cream fan and I love strawberry ice-cream too but sometimes dairy just does not agree with me. I would blend fruit and milk slightly to make a chunky sorbet but it never was the same as ice-cream so using coconut milk is a wonderful idea to get that same creamy consistency! Many people are switching from dairy so alternatives like these are a must! Coconut milk does make for a creamier consistency and has a nice flavour to it as well. Great way to have a summery treat without the inflammation dairy can cause.

Sooo delicious! I am an ice cream fan but often choose to make a healthier choice. And definitely this recipe is that. I admit that I make it in an ice cream maker, but I like that you give the option of how to make it without. My son boarded at a home where the lady made ice cream your way….it was delicious. I love strawberry but another of my favourites is maple walnut…and my husband’s favourite is chocolate. Yes these flavors work with coconut milk too. Thank you.

Trying to find some health recipes that he will enjoy. He loves ice-cream and meats (duck, steaks, bacon! Sausages). Would like to try this recipes. Isn’t coconut oil and coconut milk are high in Cholesterol and saturated fat?

Coconut doesn't contain any cholesterol and despite that saturated fat is known to raise cholesterol levels, linked with heart disease risk, proponents believe that some saturated fats in coconut oil (called medium-chain triglycerides) are less harmful and may actually raise levels of beneficial HDL cholesterol.

Strawberry and coconut is such a delightul combination and perfect for the peak of summer (will be saving this recipe for then-I bet that this recipe would be especially delightful with farmer's market fresh strawberries and also for a fun variation, since I regularly make my own coconut yogurt, I could also imagine doing this as a frozen yogurt). Also, I like the idea of adding just a pinch of white stevia; I'm a stevia fan mysel and think that would ampliy the sweet flavor just the right amount :)
