Healthy Carob Chip Cookies

Your guilt-free, dunking days are back! Grab a cold glass of almond milk and get ready to experience a healthy twist on the world’s most loved cookie. These carob chip cookies are crunchy on the outside and chewy on the inside, creating the perfect dunking equation to satisfy your needs! The only sacrifices made in this recipe are gluten, dairy, eggs, soy and pretty much anything else you may be allergic to, meaning everyone can join in on the fun!

Ingredients:

| ½ cup coconut oil, room temperature + 2 tablespoons | 2 tablespoon date syrup or unpasteurized honey | 1 teaspoon pure vanilla extract |
| ¾ cup palm sugar | 1 flax egg [1 tablespoon freshly ground flax seed and 3 tablespoon warm water] | 1 cup grain-free, vegan carob chips |

| ½ cup sorghum flour | ½ cup sweet rice flour | 1 teaspoon gluten-free baking powder |
| ½ cup arrowroot starch | 1 tablespoon freshly ground flax seed | ¼ teaspoon himalayan rock salt |
Directions
Preheat your oven to 375F
- In a small bowl, whisk your flax seed and warm water to make your flax egg. Set aside to gel.
- In a large bowl mix together your dry ingredients. Set to the side for now.
- In another large bowl, you want to cream your coconut oil and sugar – ensuring your cookies are nice and chewy! Do this by rapidly whisking together the two ingredients, or if you have it, use a hand blender to do the dirty work.
- In the same bowl, add in your flax egg, syrup and vanilla stirring to make sure everything is incorporated. Once mixed, slowly add in your dry mixture, and finally your carob chips.
- Using your hands, portion the dough into cookie sizes, and flatten slightly onto a lined baking sheet. Leaving an inch between each cookie.
- Toss your baking sheet in the oven and bake cookies until they begin to go golden brown, around the 10-13 minute mark. Before eating, allow the cookies to cool.
Make It This Way
To make the perfect, soft-on-the-inside cookie every time it’s important to cream the coconut oil and sugar first. This process takes about 3 minute to do and it works because you beat in tiny air bubbles to your mixture, resulting in a fluffy texture. Just make sure you don't over cream it, otherwise you'll beat the air bubbles in and right back out again.

These cookies are perfect for making ice cream sandwiches! Try this decadent dessert by sandwiching a small scoop of dairy-free vanilla ice cream between two of these carob chip cookies. Be warned: you'll definitely want more than just one.



I have been meaning to try carob cookies, I have had them a few times but never like this so I would be so keen to try, I am glad that I stumbled upon this recipe for healthy carob chip cookies. I hear that carob is a great alternative to chocolate chips too and is loaded with fiber and iron which is great! I also love that date syrup is included, I love dates so I can only imagine that this tastes great too.

Indeed these are a spin on an all time classic but great if you love chocolate chip cookies but want bit of a healthier alternative once in a while or aren't able to find dairy free chips to put in your cookies if you're dairy free!
I love chocolate chips and have a soft spot for chocolate chip cookies, too, as a result. Something that I love even more than chocolate chips, though, is cacao nibs. I never thought about using cacao nibs in cookies before until seeing this recipe that you have with carob, which also sounds delightful. And, for sustainability reasons, I am so glad that you suggest using a flax egg in this recipe: it is great for both health of the body and the planet :)
