Healthy Sweet Potato Bites

1 large sweet potato, cut into 1/4-inch thick coins
1 tablespoon extra-virgin olive oil
½ teaspoon dried thyme
½ brick Happy Days Dairies Feta Cheese
2 tablespoons raw pine nuts
Fresh parsley, optional
Sea salt, optional

Ingredients:

Directions
Preheat oven to 400F
- Wash your sweet potato in cold water, and using a sharp knife, cut into ¼ thick slices. Set in a bowl.
- In the same bowl, add in your thyme and a bit of salt and pepper to taste. Toss to ensure everything is coated evenly. Place potatoes flat on a lined baking sheet.
- Bake potatoes for roughly 20 minutes. Covered or uncovered.
- After the 20-minute mark, bring the potato bites out of the oven and gently sprinkle each one with feta and pine nuts. Return back to the oven and bake for another 5-10 minutes. Tip: The pine nuts should be nicely roasted, and the cheese should just be melted – this is a great way to ensure they are ready to eat!
- Remove from oven, sprinkle with parsley and serve hot!
Make It This Way
Sweet potatoes are mostly soft, but if you want to crisp them up a bit, try turning the oven to broil for the last 3-4 minutes. Just keep a watchful eye on them to ensure they don’t burn!
While we love the idea of using coconut oil in place of olive oil, because they are already sweet enough, why not use avocado or grapeseed oil instead, if you’re fresh out of olive oil.
