Mediterranean Chickpea Salad

Ingredients:
| 3 cups cooked chickpeas | 3 tablespoons fresh lemon juice | ¼ teaspoon salt |
| ½ cup sun dried tomatoes | 2 tablespoons extra-virgin olive oil | freshly ground pepper |
| ¼ cup fresh basil leaves (approximately 14 leaves) | 1 tablespoons apple cider vinegar | zest from 1/2 lemon |
Directions
- Place your sundried tomatoes in a small bowl, and cover with boiling water. Allow them to sit for 8-10 minutes, drain, rinse and then chop for your salad.
- In a large bowl, combine all ingredients, including your sundried tomatoes. Toss to coat.
- Serve right away or sit in the fridge until you’re ready to eat!
Make It This Way
If you’re in a hurry, you can always use canned chickpeas – just be sure to rinse thoroughly. Other beans would also work in its place.
Make this dish your own by adding in other Mediterranean ingredients, such as sliced olives or feta.
