Morning Goodness Muffins

You don’t have to be a morning person to appreciate these muffins! Not only do they taste delicious, they’re vegan, gluten-free and refined sugar-free, oh and did we mention they’re super easy to make! With a combination of flours, and the natural sweetness of dates with the added crunch of walnut and carrots, these muffins make the perfect pairing to your breakfast or the ultimate weekend snack!

Ingredients:

| 1 1/4 cup unsweetened long shredded coconut | 1/2 cup quinoa flakes | 3/4 teaspoon baking soda |
| 1/2 cup sweet rice flour | 2 tablespoon arrowroot powder | 1/4 teaspoon himalayan rock salt |
| 1/2 cup chickpea flour | 1 1/2 teaspoon ground cinnamon | 1/4 teaspoon ground stevia leaf |

| 1/4 cup coconut oil, melted | 8 medjool dates | 1 tablespoon pure vanilla extract |
| 1 cup warm filtered water | 1 flax egg [1 tablespoon freshly ground flax + 3 tablespoon water] |

| 1 cup raisins | 1/2 cup shredded carrots | 1/2 cup walnuts, chopped + more for topping |
Directions
Set your oven to 350F
- Make your flax egg in a small bowl, and allow to sit for five minutes.
- Combine your dry ingredients into a large bowl, and mix together.
- Place your wet ingredients (including your flax egg) into a blender and blend until smooth.
- Pour wet ingredients into your flour bowl, and stir until well combined, adding in your add-ins at the end.
- Using either muffin cups or greased muffin tins, spoon your mixture into the cups and place in the oven to bake for 30-35 minutes.
Make It This Way
Get creative with your add-ins! Add in your favourite dried fruits, nuts or even try adding in some pepitas for some added heart healthy magnesium and immune support!
If you don’t have quinoa flakes, you can easily pulse your own quinoa in a coffee grinder, or try swapping them out for roughly ground flax – just make sure you don’t over do it!

I love muffins but I find the store bought ones can leave me feeling groggy and unsettled, even if they are delicious! This muffin recipe is filled with healthy and nutrient dense ingredients that will also make sure you are fueled and full after eating them! I can't believe I never checked out the recipes on this website before. I've ordered and looked at the articles, but somehow completely skipped over the recipes, but there are so many good ones here! This recipe sounds super simple and quick to make and it'd be so much healthier than store-bought muffins. It's a versatile recipe too, I'll probably try adding some soaked chia in here for an extra health boost, though this recipe is already so good it's not necessary.

I love muffins in terms of taste and texture. And, I have quite a few wholesome memories wrapped up with muffins: for example, a friend of mine in college really loved Trader Joe's Morning glory muffins and I remember enjoying some of those beauties during difficult times including before psets and exams, in order to power through. But, even then, I never found the muffins as filling as I had hoped. And, the added sugar content...hahaha yes, it was a bit much. I have used dates quite a bit in recipes yet never baked with them and think that you might have just inspired me there, NN! <3
