No-Bake Carob Chews

This new and improved chocolate rice crispy bar to the rescue! This small bar can help satisfy your need for a) chocolate and b) crunch all in one bite. Now you won’t have to deny yourself a sinful treat after dinner or cringe at the thought of coming up with some healthy idea when your kids ask for one too. This bar is everything you need all rolled into one, and the best part – there is no baking required and they can store in your freezer up to three months, so you’re always prepared. Moms really are a superhero, aren’t they?

Ingredients:
| ½ cup extra virgin coconut oil | ½ teaspoon salt | ¾ cup sunflower seeds |
| 1 cup unsweetened carob chips | ½ teaspoon vanilla extract | ½ cup puffed cereal (natures path rice puffs work well) |
| ½ cup agave nectar | ¾ cup crisp cereal (try enjoy life crunchy rice or nature's path crispy rice cereal) |
Directions
- Bring a large saucepan with water to a boil (this will turn into a double boiler, so if you have the proper pans then go ahead and use them!)
- While waiting for the water to boil, combine sunflower seeds and both cereal mixtures in a bowl. This would also be a good time to grab a 9x9 pan and line it with parchment paper or a silicon-baking mat. Set both of these items aside.
- Now that your water is boiling, we need to make a double boiler. If you have the proper pans, great. If not, place a large metal mixing bowl on top of the boiling pot of water. Add in coconut oil.
- After your oil has melted, sprinkle in the carob chips and allow that to melt – remembering to stir to avoid clumping or burning.
- Once your coconut oil and carob chips have melted, stir in agave, salt and vanilla extract to the mixture. Stir constantly.
- Carefully remove the warm mixture from the heat, and add in the cereal mixture – mixing thoroughly.
- Using a spatula, scrap mixture into your lined pan and spread evenly as best you can.
- Firm up your mixture by placing them in the freezer for 20-30 minutes. Once hard enough remove from pan and cut into bars using a sharp knife.
Make It This Way
If you don't have agave on hand, no problem! You could also substitute it with any other liquid sweetener you have in your cupboard, such as: maple syrup, honey or yacon syrup.
You can use sweetened carob chips in this recipe if you have them, just leave out the agave syrup and the recipe should be sweet enough.
Instead of making squares, you could roll the mixture into bite-sized balls and then freeze!

I am loving these no bake recipes that are not only chocolate and sweet but crunchy too! It is really like a chocolate rice Krispie treat equivalent but with the added bonus of being homemade and filled with healthy ingredients that you know where they came from! I have heard a lot of great things about carob and I am keen to keep trying recipes with more carob featured in them so this is a great way to ease into it and start! Thanks for sharing

No bake but best bites! I love the cookie dough kind of flavor as well as savory crispy/toastier flavor that you combine in this recipe (sunflower seeds even raw have the latter flavor and the former is offered by the combination of coconut oil, vanilla, carob, plus the sweetness of the agave). I like how very simple these are to make. Thank you for all of these recipes! They have been a great resource to me and as a busy PhD student who tries to eat healthy but is often tight on time the have been absolutely awesome :)
