Smoked Paprika Kale Chips

These chips are so finger licking good; you will forget that they’re actually good for you as well! Replace these seasoned kale chips for your regular BBQ chips and reap the health benefits knowing they are vegetables and have no hidden additives or sugars. Get creative with the seasoning to replace your favourite flavor and seal them in a Ziploc bag for optimal freshness. Now all you need is a blanket and you’re ready for movie night!

Ingredients:
| 1 head kale | 1 tablespoon olive oil | ½ teaspoon salt |
| 1/3 cup cashews | 1 tablespoon smoked paprika + more for sprinkling | dash of cayenne |
| 2-3 tablespoon water | 2 teaspoon garlic powder |
Directions
Set your oven to 350F
- Wash your kale, and place on a paper towel or serving towel to dry. Set aside.
- In the meantime, combine all other ingredients into a food processor or blender. Blend until smooth – if the mixture is too thick, try adding small amounts of water until you get the desired consistency, it should be more like a dressing.
- Pat your kale dry, if its not already, and tear into bite sized pieces. Place kale and ¾ of your dressing into a bowl and toss to coat.
- Place kale on a baking sheet and drizzle with remaining dressing.
- Bake in the oven for 15-18 minutes, until desired crunchiness
Make It This Way
Swap out the seasoning for other ingredients that mimic your favourite chips. You could do salt and pepper, salt and vinegar or a variety of others – just get creative.

Try munching on these if you’re one of those people that need to eat something while they watch TV. It’s tasty, and not nearly as bad for you as those savory, crunchy chips.



Must try!! Smoked paprika is one of my favourite seasonings and I am definitely the type of person that needs to be eating while watching something but I hate the groggy and icky feeling that too much oil and processed foods give me like chips! This is such a great alternative! I personally love the taste of kale so this is a great snack for me and I can’t wait to try it! The recipe looks easy to make which I also love because it’s a quick and easy recipe to make without thinking too much! Great idea, thanks for sharing :)

Smoked Paprika is a great tasting seasoning and with this recipe you can switch the seasoning as you like too! Kale chips give the same crunch and satisfaction as regular chips, but definitely offer more health benefits. Hope you like them.

My roommate just started to experiment with kale chips. She has a bunch of cashews on hand. I feel silly as a vegan for not instantly thinking of doing something "cheesy" with the cashews. Thank you for bringing this to the forefront of my mind. I'll be sharing this recipe with my roommate and I suspect that I might be enjoying some of the reward for a good recipe shared (my roommate and I share our baking regularly, and, yes, I did quite enjoy some generous samples she gave me from her last batch of kale chips!)
