Spicy Chicken-Stuffed Quesadilla

Make every night Mexican night with this savory, and a wee bit spicy, quesadilla! By using cilantro, black beans, avocado and a touch of jalapenos, this dish has all the usual suspects. Serve it up with some fresh greens, a bean salad or slice it up into bite-sized slices and serve as an appetizer. Make this dish even faster by using up leftover chicken from the night before and listening to salsa music – cooking has never sounded so good!

Ingredients:
| 1 rice tortilla | ¼ red pepper, diced | 1 tablespoon jalapenos, diced |
| ½ leftover chicken breast, diced | ¼ avocado, sliced | 1 tablespoon fresh cilantro, minced |
| ¼ cup black beans, drained and rinsed | 2 tablespoon mozzarella cheese | 1/8 teaspoon salt |
| 1 yellow onion, sliced | 1 tablespoon extra virgin coconut oil |
Directions
Preheat oven to 400F
- You can cook quesadillas a few ways; if you have a sandwich grill, turn it on. If not, preheat your oven to 375F and use a lined baking sheet instead.
- In a large frying pan over medium heat, melt your coconut oil and sauté your onions until translucent. Next, add in your peppers and season lightly with some salt and pepper. Cook for another five minutes.
- As this is cooking, in a large bowl combine your beans, jalapenos, cilantro, chipped chicken and avocado. Stir well and set aside.
- Add in your onions and peppers to the bowl.
- Grab your tortilla shell and place on either the baking sheet or grill. Fill one half of the shell with the contents, sprinkle with cheese and fold over the other half of the shell.
- If using a grill, press until the cheese it melted. If using an oven, bake for roughly 8-10 minutes.
Make It This Way
Turn this dish vegetarian by using more sautéed veggies instead of chicken. Make this dish dairy-free by using a dairy-free cheese instead.
This dish can easily serve as many as you wish, just times the ingredient list by how many people you have coming over for diner – it’s that simple.

I am a huge fan of spicy foods so these spicy chicken stuffed quesadillas are the perfect recipe for a quick and easy lunch or dinner! I love quesadillas and don't know why I don't make them more often but with a great recipe like this, it is making me crave them! This recipe has great instructions too as sometimes when I make things with tortillas they come out soggy but this one looks very promising! Besides, who does not love a quesadilla that has a good crunch to the tortilla? Thanks for sharing this recipe, it looks delicious!
I thought I didn't like spice but it's grown on me and this recipe sure looks like a home-run in terms of flavors, textures, and aromas. I can imagine the creaminess of the mozzerella and how nicely the intrinsic flavor and onion-garlic enriched beans compliment it. Then, the satiating umani of protein, not bland but craveable and nourishing thanks to some nice spice. And then, then is the avocado: who doesn't love avocado? (well, I do know some people who do not love avocado but I am a big fan). I am going to have to try this recipe with tofu! :D (I'm plant-based)
