Spinach Tarragon Dip

You love to dip, but you’d like a little something to throw in the mix besides hummus, or… hummus. Well, step aside hummus, because this spinach tarragon dip is the next best thing. With all the spinach, walnuts and tarragon, you’re getting so many vitamins and fiber with a dash of Omega-3 fatty acids that you’re body will crave it again and again! Whether you enjoy it with crackers or raw veggies this dip is sure to shake things up a bit (in a good way) in your routine!

Ingredients:
| 1 cup raw walnuts | 2 tablespoons dried tarragon | ½ teaspoon onion powder |
| 4 cups spinach | 2 tablespoons fresh lemon juice | ¼ teaspoon salt |
| ¼ cup extra-virgin olive oil | 1 clove garlic |
Directions
- Measure out all ingredients and place into a blender or a food processor. Combine ingredients until smooth. There should be no chunks in your mix!
- Serve right away, or place in the fridge until you’re ready to enjoy.
Make It This Way
Try making this with avocado oil or grapeseed oil if you have it around.
To make this dip a little on the peppery side, try using 1 cup of arugula and 3 cups spinach.
Make this dip with fresh tarragon for a well-rounded taste.
Try This
Use this as a pesto-spread and smear some on your sandwich. Even try adding a handful of basil for the authentic, pesto taste!
