Summer Fresh Lemon Coleslaw

No BBQ dish would be complete without the crunchy addition of a coleslaw salad! But no one says it has to be the same one, summer after summer. Add some zest to your slaw with some lemon and goat cheese, and enjoy the lightness of having more of a vinaigrette dressing. It’s so refreshing and tasty you’ll forget about the hamburgers and want to eat the entire bowl for dinner!

Ingredients:
| 4 cups shredded coleslaw mixture | 1 roll soft lemon goat cheese | 1 clove garlic |
| 2 cups shredded broccoli slaw mixture | 1 tablespoon mayonnaise | freshly ground pepper and sea salt, to taste |
| 3 green onions, thinly sliced | 1 tablespoon apple cider vinegar | handful of sunflower seeds, toasted [optional] |
| ½ green apple, finely sliced | 1 tablespoon fresh lemon juice |
Directions
- In a large serving bowl, mix together your first four ingredients. Toss to combine.
- In your blender combine all other ingredients, pulse until smooth. This is your dressing so make sure it is well mixed!
- Slowly add your dressing to the bowl of greens and toss to mix.
- Top with sunflower seeds, if you wish, and serve!
Make It This Way
If you have a little time on your hands, why not try buying a fresh head of cabbage, some carrots and broccoli and cut up your own salad. It will taste fresh and won’t have any added preservatives or pesticides like a bagged salad.
Make this dish with your own homemade mayo, or buy a vegan one at the store to make it more accommodating to all eating styles.

Who said this dish had to be served on the side? Try adding a little to your burger or pulled pork sandwich and enjoy the nice citrus crunch to your meal!



The Apple cider vinegar adds a lovely fresh flavour to the dressing. The broccoli and carrots add colour, and are packed with nutrients. I agree, it is a nice change to update the coleslaw salad and a healthy option to a green salad during the summer. The ingredients are readily on hand and the vegetables fresh from the farmer’s field. I do not use bagged salads as I am never sure how they have been prepared. Working with fresh vegetables produces the best results.

I love coleslaw and I love it alone or on sandwiches or hotdogs, etc. So this recipe makes it super simple to make your own at home coleslaw with fresh flavours and I love the addition of sunflower seeds to this recipe! They are a great way to add a fun crunch as well as adding more nutrients and protein and fiber! This looks great and looks like it would be a wonderful addition to bring to a BBQ or an event, or just to make for yourself just because it is that easy! Thanks for sharing, this looks amazing!
I am always looking for a new salad to try in the summertime. Even though it's just Spring right now, I like to start looking now in order to find some awesome recipes. This looks easy to make and has some great ingredients in it. I always love the tang of lemon in pretty much anything - and garlic as well. I will give this recipe a try this summer. My mother LOVES German coleslaw and this recipe sounds perfectly to her tastes (minus the broccoli): the onion and the mix of garlic, lemon flavor, mayo green apple and apple cider vinegar have that rich and spicy, tart flavor that she craves. I had no idea that coleslaw could be so creative!! I do not personally enjoy coleslaw but this has given me the motivation to try more riffs on my own favorite recipes...and I'll certainly be sharing this recipe of yours with my Mum :)

Loved the lemon dressing with out the goat cheese. Used garlic cream cheese.
