Tropical Hawaiian Energy Bar

Set sail to the land of bar-bliss when you indulge on these Hawaiian inspired treats.
Enjoy the flavours of coconut, mango and papaya all the while aiding in a healthy and nutritious diet. It's loaded with vitamin C, antioxidants and healthy fats that will benefit your immune system, skin and overall energy. Made with aloha, the only thing missing when you’re enjoying one of these bars will be the sandy beach beneath your feet!

Ingredients:
| 1 ½ cups dry raw quinoa | 3 tablespoons whole chia seeds | ½ cup honey |
| 2 ¾ cups water | 1 cup dried mango, cut into bite size pieces | 3 cups shredded unsweetened coconut |
| ¾ cup full fat coconut milk | ½ cup dried papaya, cut into bite size pieces | ¼ teaspoon salt |
| 3 eggs | ½ cup dried figs, cut into bite size pieces |
Directions
Preheat oven to 325 F + line a 9 x 13 pan with parchment paper or silicon-baking mat
- Place quinoa in a strainer and rinse thoroughly under cold water for at least a minute. Add measured water to a medium sauce pan and bring it and quinoa to a boil for 20-25 minutes – saucepan should be covered and remain unopened until at least the 20-minute mark, same as if you’re cooking rice. After its finished cooking, put to the side.
- In a small bowl combine coconut milk, eggs and chia seeds. Mix well and place to the side for now.
- Using a larger bowl this time, you’ll want to combine both parts of the recipe made thus far: the quinoa and the liquid mixture. Mix thoroughly, adding in remaining ingredients to the bowl so everything is properly stirred.
- Using a spatula, transfer contents from the bowl into the baking pan. Scrapping the sides to ensure nothing is missed. Now, using your fingers press the mixture firmly into the pan, removing any air pockets.
- Place pan in the oven and bake for 30-40 minutes – a nice golden brown colour should start to show when it is done.
- Allow the pan to sit on the counter to cool for 20 minutes or so. Now, holding the parchment paper or silicon-baking mat, lift the contents to a cooling rack. After it has greatly cooled down, you can then use a knife to cut it into bars!
Note: These tasty bars are a little messy if you don't let them cool. The longer they sit, the firmer they will get. You can also put them in the fridge for a few hours to help them firm up.
Make It This Way
Be sure to use unsweetened dried mango and papaya in this recipe, otherwise you'll be adding a whole lot of unnecessary sugar to your bars and they won't be nearly as healthy.
Go Egg-Free: Make this recipe egg-free by substituting the eggs with the flax seed egg substitute listed below.
Flax Seed Egg Substitute
[below measurements replace 1 egg]
1 tbsp finely ground flax seed
3 tbsp water
Combine ingredients and allow them to sit for 5 minutes. Add to recipe as you would normally.

Try one of these bars with your morning smoothie or with a handful of nuts and you'll have lots of energy all the way to lunchtime. Make it a dessert bar by topping it with a scoop of dairy-free ice cream.



These tropical Hawaiian energy bars are so creative! Usually when I see energy balls they are always chocolate or some kind of protein powder creation, this recipie is so different than anything I have ever seen when it comes to energy bars and I am so excited about it! They look so delicious, filling, and filled with amazing ingredients for your body! I remember the classic magic bar from college. They would serve them after symposia or talks and I always would be eager for those leftovers-yum! Delicious and satisfying the mix of flavors. I never imagined a tropical version of them and think that this recipe sounds simply delightful (though I would like to make a plant-based version...and I hope you forgive me but a modification that I see absolutely essential for me is to add macademia nuts...which I think would compliment the fruits you select perfectly!)
