Walnut Crunch Apple Wedges

If you think the pictures looks good… wait until you try them! These walnut crunch apple wedges are the perfect snack, dessert or breakfast side dish. They taste sinfully good, but you can relax knowing that while these wedges are crispy, they are not fried and contain no oil. Serve these with a dish of maple syrup for dipping and people will think you’ve gone to the local fair to get these tasty, unheard of treats!

Ingredients:
| 2 granny smith apples, sliced – keep the peel on! | ½ cup walnuts | 2 tablespoons cinnamon |
| ½ can organic full fat coconut milk | ½ cup almond flour | ½ cup flax |
Directions
Set your oven to 350F
- Slice your apples, and set aside.
- In a shallow bowl, measure out your coconut milk. Place all of your apple slices into the milk, and set aside.
- Using a blender or a food processor, blend your walnuts, flour, cinnamon and flax together. You will want to process until your mixture is a rough-flour, not fully broken down, but not chunky. Transfer mixture into a small bowl.
- One at a time, take an apple slice and fully coat it with your nut mixture. Once coated, place onto a pre-lined baking sheet. Repeat until all apples are gone.
- Place your apples into the oven and bake for 16-20 minutes. You will want them to get a nice golden glow.
- Serve hot!
Make It This Way
You can use any type of nut you desire – if you’re not a fan of walnuts, try using almonds, hazelnuts or pecans.
If you’re not a fan of green apples, you can use yellow or red ones as well. Just remember that the tartness of the green apples helps balance out the sweetness of the coating!

Apples and peanutbutter, to me, is overrated. Yes, I understand the idea of the crispness and freshness of apple wedges with the creaminess and the nuttiness of peanutbuttter. But, there are certainly other nutty flavors to enjoy. I love how this recipe uses omega-3 rich walnuts, cinnamon, and flax for a nice fall flavor profile. I bet that the full fat coconut milk makes the recipe super creamy as well. I wonder: could coconut yogurt be used here? I like that idea because by adding coconut yogurt, it would add in a nice probiotic punch to further the health benefits of this delightful and clever snack :)
