Warm Bacon Broccoli Salad

Bacon, in a salad – yes, your dreams have come true! Not only is this salad perfectly balanced between savory and sweet, thanks to the honey and dried currants, but its healthy, too! We love that it is slightly warmed, because once you add the dairy-free, creamy dressing, every bite is simply sinful. Pair it with your next dinner and you’ll be surprised at just how quickly your family can eat their broccoli!

Ingredients:

| 6 cups fresh broccoli florets, steamed for 3 minutes | ½ cup sun dried tomatoes, sliced thin | ¼ cup sunflower seeds |
| 7 strips bacon, cooked fully and then chopped | ¼ cup dried currants | ¼ cup of red onion, chopped |
| dressing | ||
|---|---|---|
| ½ cup canola, olive oil or egg-free mayonnaise | 1 tablespoon gluten-free mustard | |
| 2 tablespoon raw apple cider vinegar | 1 tablespoon honey |
Directions
- In a large frying pan, cook your bacon until crispy. Pat with paper towel to de-grease and cut into smaller pieces. Place in a large bowl.
- Add all other salad ingredients into the same bowl, except your broccoli.
- Place your broccoli in a steamer for 2-3 minutes, just until it turns a little tender. Add to your bowl.
- As your broccoli is cooking, combine all of your dressing ingredients into a small bowl and whisk together until well incorporated.
- Pour your dressing onto your salad, and toss to coat.
- Serve right away!
Make It This Way
This salad would work with sliced Brussels sprouts as well.
For an added healthiness, try using coconut oil instead of canola or olive oil

You can also eat this salad cold; just place all the salad ingredients into the fridge for an hour to chill before dressing and serving!



I had a wonderful warm broccoli salad in a potluck party years ago that I loved so much. I have been searching a recipe for it. I think this may be the one. Can’t wait to try it tonight.

...eat it with salad!!! I agree 100% with the idea that nutrition is highly personal and so too is perfection in nutrition. Yes, bacon is technically a carcinogen, but so too is the sun!!! If one must eat bacon and can find more healthful balanced ways of eating it, like a superb salad teeming with antioxidants from wholefoods (esp the wonderful veggies), healthy fat (sunflower seeds), prebiotics, and fruit....one will certainly have benefits with the bacon! :D

Indeed, this salad is all about balance. While fat is of course ok in moderation, adding it to salad ensures you also get a few servings of vegetables, providing more nutrients overall. You could also substitute the bacon for plant-based bacon or maple tempeh if you follow a plant-based diet. We hope you enjoy it.
