Maple-Pecan Crusted Sweet Potato Mash

We’ve got just the thing to take your family dinner to the next level with this pecan crusted sweet potato casserole. The best part, besides this dish being able to cater to your gluten-free aunt and your vegan niece, is the delicious flavor that your entire dinner table will enjoy. It’s the perfect taste of autumn all wrapped up into one big casserole dish. We love the added taste of maple to make this dish extra Canadian!

Serves 4-6

Ingredients:

mash:
2 medium sweet potatoes2 garlic cloves, minced¼ teaspoon chopped fresh ginger
3 tablespoons dairy-free yogurt2 teaspoons maple syrup¼ teaspoon sea salt
crusted topping:
2 tablespoons chopped raw pecans1 ½ teaspoons extra-virgin olive oil¼ teaspoon ground cinnamon
1 tablespoon palm sugar1 teaspoon maple syrup1/8 teaspoon ground nutmeg
1 ½ tablespoons sorghum flour½ teaspoon gluten-free pure vanilla extract

Directions

Preheat oven to 375F

  1. Toss your whole sweet potatoes on the rack of the oven to roast for 30-40 minutes. They should be easily poked with a fork when ready.
  2. Once your potatoes are done and cooling, adjust your oven temperature to 350F, and use coconut oil to grease up your casserole dish – set aside.
  3. Carefully remove the skins from your potatoes. Discard skins (or roast further with salt as a tasty mid-prepping snack!)
  4. In a large bowl, place your potatoes and mash until smooth. Add in your remaining ingredients from the mash: yogurt, ginger, garlic, maple syrup and salt. Mix until well incorporated.
  5. Using a spatula, transfer the mixture over to your casserole dish and flatten with your utensil.
  6. In a small bowl, mix all of your other ingredients to make your crusted topping. Stirring well to ensure everything is well combined. Carefully spread this mixture onto the mash, making sure it is as even as possible.
  7. Place casserole dish into the oven and bake for 40 minutes. You will want a nice golden glow on your crusted topping. Note: if you want to get it a little crispier, switch your oven to broil for the last five minutes. Just make sure to watch it like a hawk so it doesn’t burn!
  8. Allow the dish to cool slightly before serving.

Make It This Way

If you’re afraid this dish will be a little too sweet for you, remove the maple syrup from the mash mixture – and just keep the maple syrup in the mixture for the topping.

This dish would work well with mashed carrots and turnip, or squash as well.
