Dairy-Free Strawberry Ice Cream
If you’re an ice cream lover, than you’re well aware of the added sugars, and costs associated with your favourite dessert. That’s why we’re here to offer a healthy, cost effective solution that you can make at home! Even better, it’s creamy and loaded with fresh strawberries and just a hint of coconut. It takes only 4 healthy ingredients, your freezer and a little elbow grease to make it, so have fun!
Serves 2
- Gluten Free - Dairy Free - Egg Free - Sugar Free - Vegetarian
Ingredients:
- 1 16 oz. can of lite coconut milk
- ½ teaspoon pure vanilla extract
- 1 cup of strawberries
- pinch white stevia
Directions:
- Using a blender, pulse all ingredients until smooth and creamy – almost like a milk shake consistency.
- Using shallow, glass containers, divide the ice cream into two. Place both of them in the freezer, covered with saran wrap.
- Check the mixture every 1.5-2 hours, and using a spoon, stir the mixture to keep it from freezing solid. Repeating the process until you get the desired consistency you want.
Make It This Way
If you're not a fan of stevia, then go ahead and substitute it in this recipe with either 4 pitted medjool dates or 2 tablespoons of raw agave nectar and blend with the rest of the ingredients.
Swap out the strawberries for any of your favourite fresh fruit, such as raspberries, mango, blueberries etc.

Try a scoop of this strawberry ice cream in a cone and topped with toasted coconut ice cream on a hot day!
