Ingredients:
2 teaspoon coconut oil½ cup light coconut milk2 tablespoons fresh cilantro
1 yellow onion, diced¼ cup unsweetened coconut½ tablespoon lime juice, fresh
1 stalk lemon grass, finely sliced¼ teaspoon sea salt
2 cups water200 grams cooked shrimp
DIRECTIONS
Using a large pot over medium heat, bring your coconut oil to a melt.
Toss in your onion, ginger and lemon grass, bringing the ingredients to a sauté - you want the onions to be translucent and soft. Stir constantly to avoid burning.
In the same pot, combine the water, coconut and salt. Cover with a lid and bring all ingredients inside to a boil.
After roughly 20 minutes of boiling, remove from heat and add in your shrimp, lime juice and cilantro. Stir.
Using a blender or stick blender, its time to turn your creation into a delicious creamy soup. Blend until you reach a smooth consistency.
Serve hot!
Make It This Way
If you’re not a fan of shrimp, why not try swapping it out for chicken. Or make it vegetarian by using tofu or removing the meat altogether.
Garnish with some cilantro and a whole shrimp.
