Vietnamese Chicken Noodle Soup

While it’s not your average chicken noodle – we’ve swapped out the regulars for kelp noodles – the wholesome tastes that you know and love are still there. With an added zest of citrus and ginger, this soup will not only help you fight the common cold, it may prevent it from happening altogether!

Ingredients:
| 1 package of kelp noodles | ½ cup fresh cilantro, minced | 1 tablespoon fresh ginger, grated |
| 8 cups boiling water | 8 green onions, chopped | 1 tablespoon lemon juice |
| 2 cups chicken breasts, chopped [roughly four breasts] | 3 tablespoons gluten-free chicken bouillon powder | 1/4 teaspoon lemon zest, grated |
| 4 cups baby bok choy, chopped | 4 cloves garlic |
Directions
- As far as soups go, it doesn’t get much easier than this. Bring all of your ingredients, except the kelp noodles, to a boil in a large pot.
- Allow contents to boil for upwards or 10 minutes, and then reduce heat and bring to a simmer for 30 minutes.
- A few minutes before serving, add in your kelp noodles so they can soften.
- Serve right away!
Make It This Way
Make this soup paleo by making your own chicken broth from the bones, instead of using a packaged one.
Make it with beef or vegetable broth if you prefer.
Try This
Serve this soup like you would a Pho for some added fun around the dinner table. Chop up some fresh cilantro, mint, basil, and bean sprouts and have them on the table so people can add them in if they prefer. Hot sauces make a great compliment to this dish as well.



I love your recipes. I think that this particular recipe, actually, would be even better with tofu! And not necessarily fully vegetarian, even. I think that the addition of chicken broth with tofu sub would be quite delicious. Thank you for more good recipe inspiration: for example, I do not even really like soups usually but the flavor combinations of this one really appeal to me. And, I am 100% plant-based so I will have to see how that goes for me :)
