Creamy Thai Shrimp Soup

There’s no need to feel guilty when you indulge in a creamy soup – especially with this dairy-free one! With all the fresh and delicious tastes of Thai, from the coconut and cilantro to the lemongrass and lime this soup is simply satisfying. Enjoy it for lunch so you can experience around the world taste without even leaving the lunchroom!

Ingredients:
| 2 teaspoon coconut oil | ½ cup light coconut milk | 2 tablespoons fresh cilantro |
| 1 yellow onion, diced | ¼ cup unsweetened coconut | ½ tablespoon lime juice, fresh |
| 1 stalk lemon grass, finely sliced | ¼ teaspoon sea salt | |
| 2 cups water | 200 grams cooked shrimp |
Directions
- Using a large pot over medium heat, bring your coconut oil to a melt.
- Toss in your onion, ginger and lemon grass, bringing the ingredients to a sauté - you want the onions to be translucent and soft. Stir constantly to avoid burning.
- In the same pot, combine the water, coconut and salt. Cover with a lid and bring all ingredients inside to a boil.
- After roughly 20 minutes of boiling, remove from heat and add in your shrimp, lime juice and cilantro. Stir.
- Using a blender or stick blender, its time to turn your creation into a delicious creamy soup. Blend until you reach a smooth consistency.
- Serve hot!
Make It This Way
If you’re not a fan of shrimp, why not try swapping it out for chicken. Or make it vegetarian by using tofu or removing the meat altogether.
Garnish with some cilantro and a whole shrimp.

I love creamy soups, I find a thick soup is so filling and delicious and reminds me of warmth and comfort. I love how this soup incorporates lots of protein and healthy fats and the taste of lemon grass adds a nice refreshing aspect that would make me want to eat this all year round, not just in the colder months. There is nothing like a good soup where you can add a lot of "hidden" vegetables in there to really boost your meal! Looks delicious!

Creamy soups are delicious, when served warm, they are excellent ways to warm up on a cold or rainy day. They're also quite filling and can even be served cold, like gazpacho, in the warmer weather. This flatbread recipe would be great for dipping too:

I absolutely cannot stand lemongrass!! To me, it ruins everything that it is put in. I did not realize that lemongrass actually had some nutritional merit (eg you describe it as having positive contribution to bone health, energy metabolism, hormone health, and electrolyte balance)! Still, though, I am not going to try try to make myself like this ingredient; it has ruined all too many culinary experiences for me, and, for me at least, has an emetic effect which is distinctly unpleasant.

Lemongrass is an acquired taste, it does go well with other Thai culinary flavours, but if you're not a fan it can be overpowering. Hopefully you know someone you can share this fresh tasting recipe with.
