Almond Flour Scones

If scones are your nemesis in the bakery section at the grocery store, we’ve got just the thing to cheer you up and bring back your favourite baked good! With these health-inspired scones, you no longer have to fall off the health-wagon just to indulge. This scone recipe is packed with nutrients, fiber and great taste, while meeting the needs of most eating styles – it's even Candida diet friendly!

Ingredients:
| 2 cups almond flour | 1 teaspoon maple flavor | ¼ teaspoon nutmeg |
| ½ cup raisins | 1 teaspoon pure vanilla extract | 1/8 teaspoon ginger |
| ½ cup pecans, chopped | 1 teaspoon cinnamon | dash of salt |
| 1 flax egg [1 tablespoon freshly ground flax + 3 tablespoon water] | 1 teaspoon baking powder | |
| 3 tablespoon almond milk | ¼ teaspoon ground stevia leaf |
Directions
Preheat oven to 375F
- First, in a small bowl prepare your flax egg. Whisk together and set aside for now.
- Using a large mixing bowl, whisk your almond flour, cinnamon, baking powder, stevia, nutmeg, ginger and salt together.
- Bring the rest of your wet ingredients together in a small bowl: flax egg, milk, maple and vanilla.
- Combine both the dry and wet ingredients into one bowl. Mixing thoroughly so everything is well incorporated.
- Using your hands, kneed the dough and fold in your nuts and raisins.
- With your hands still in the mixture, divide the dough into two sections. Flatten each dough section into a rough circle – dough shouldn’t be more than ½ inch thick!
- Using a sharp knife cut each circle like a pie – making 6 slices in each.
- Place on a pre-lined baking sheet, leaving room between each scone to expand, and bake for 20-22 minutes, or until you see the nice golden glow.
Make It This Way
You can substitute the “flax egg” in this recipe with one regular egg. This change will increase the protein and fat content of the scones.
Instead of raisins, you could use other dried fruit like currants or cranberries.
