Almond Flour Scones

If scones are your nemesis in the bakery section at the grocery store, we’ve got just the thing to cheer you up and bring back your favourite baked good! With these health-inspired scones, you no longer have to fall off the health-wagon just to indulge. This scone recipe is packed with nutrients, fiber and great taste, while meeting the needs of most eating styles – it's even Candida diet friendly!

Makes 12 scones

Ingredients:

2 cups almond flour1 teaspoon maple flavor¼ teaspoon nutmeg
½ cup raisins1 teaspoon pure vanilla extract1/8 teaspoon ginger
½ cup pecans, chopped1 teaspoon cinnamondash of salt
1 flax egg [1 tablespoon freshly ground flax + 3 tablespoon water]1 teaspoon baking powder
3 tablespoon almond milk¼ teaspoon ground stevia leaf

Directions

Preheat oven to 375F

  1. First, in a small bowl prepare your flax egg. Whisk together and set aside for now.
  2. Using a large mixing bowl, whisk your almond flour, cinnamon, baking powder, stevia, nutmeg, ginger and salt together.
  3. Bring the rest of your wet ingredients together in a small bowl: flax egg, milk, maple and vanilla.
  4. Combine both the dry and wet ingredients into one bowl. Mixing thoroughly so everything is well incorporated.
  5. Using your hands, kneed the dough and fold in your nuts and raisins.
  6. With your hands still in the mixture, divide the dough into two sections. Flatten each dough section into a rough circle – dough shouldn’t be more than ½ inch thick!
  7. Using a sharp knife cut each circle like a pie – making 6 slices in each.
  8. Place on a pre-lined baking sheet, leaving room between each scone to expand, and bake for 20-22 minutes, or until you see the nice golden glow.

Make It This Way

You can substitute the “flax egg” in this recipe with one regular egg. This change will increase the protein and fat content of the scones.

Instead of raisins, you could use other dried fruit like currants or cranberries.

Try This

Try these scones with a thin spread of vegan butter, a dab of coconut oil or some homemade jam and your favourite nut butter!

    Almond flour scones

    The maple flavour of these almond flour scones really makes them a great treat for breakfast! Maple syrup always reminds me of pancakes, waffles, and really most breakfast foods so I love how this recipe has the flavouring of it in them! The almond flour is also a great alternative to regular flour as well. I also love how it shows suggestions of ingredients to swap out although I would love to try them with a flax egg like intended but currants or cranberries also sound like they would be tasty instead of or along with the raisins!

      Indeed, to Canadians, maple syrup is synonymous with breakfast and these scones are no exception. You can add in other flavourings like you mentioned to switch it up once in a while.

    Great recipe - I love scones.

    I don’t like raisin so I replace it with dried cranberries. I also add two scopes of unsweetened whey protein powder to boost up protein content. It turns out beautifully. Thanks for a great recipe. This is my go to scone recipe now.
