Dairy-free Caprese Salad

Italian food is simply the best – and this dish is just another tasty reason why! We love the modern twist on this traditional caprese salad. By removing the mozzarella, we’ve made this dish dairy-free and still delicious. Instead of the typical balsamic dressing, you can expect to find a slightly sweetened vinaigrette. But rest assured, with the fresh basil and cracked pepper, this salad has plenty of flavour!

Ingredients:
| 4 hothouse tomatoes, cut in wedges | 1 tablespoon white wine vinegar | freshly ground pepper |
| 10 small basil leaves | 1 teaspoon palm sugar | |
| 1 tablespoon olive oil | ¼ teaspoon sea salt |
Directions
- After cutting your tomatoes, place them in a serving bowl, along with your basil.
- In a separate bowl whisk together all of your other ingredients. Mix until well combined, and slowly drizzle across your tomatoes.
- Chill your salad or serve right away Tip: To avoid soggy basil, don’t add in until you’re ready to eat!
Make It This Way
Hothouse tomatoes are not essential – you can use any type of tomato you prefer, the ones that are in season would be the best tasting!
To make this dish sugar free, remove the palm sugar – the dish tastes more traditional without it!
If you’re not worried about this dish being dairy-free, go ahead and add some fresh mozzarella for a proper Italian salad.

A nice Caprese salad is my favorite salad! I love the freshness and sweetness of it, and I love vinegar so adding balsamic vinegar to is phenomenal. I sometimes have a hard time with dairy so having a dairy-free option is so nice, I also think vegan cheese could add a nice flavour as well. Sea salt is a great addition to this salad too. I love having this salad for a snack as well as an addition to meals!

A good caprese is delightful. This recipe gets the basics of the tomatoes and aromatics...though there certainly is something missing for me. I know that it makes the recipe less healthful for sure but I want to pair it with some good ciabatta or flatbread and some fresh slices of artisan vegan cheese. It's simply, sinfully flavorful, with the rich taste of the Mediterranean. Thank you for the idea...and for rekindling some good food memories for me with this particular recipe too!
