Everything Good for You Grain Salad

Get ready to experience a taste explosion! This grain salad is packed full of minerals, vitamins and nutrients and if eaten for lunch, will have no problems keeping you full all the way till dinnertime. It has a great sweetness from the dried fruit and fresh mangos, and has a fabulous crunch factor from the raw nuts. Make a big batch and keep it in your fridge for up to five days, that way you’ll always have a healthy go-to snack, lunch or side dish!

Ingredients:

| 1 cup raw millet | 1 cups fresh spinach, chopped | ½ cup unsweetened dried cranberries |
| ½ cup raw quinoa | 1 mango, cubed | ¼ cup yellow onions, diced |
| 3 cup water | ½ cup slivered almonds |
| lemon poppy seed dressing | ||
|---|---|---|
| ¼ cup lemon juice | 2 tablespoon dijon mustard | pinch of salt and pepper |
| 1.5 tablespoon raw unpasteurized honey | 1 tablespoon poppy seeds |
Directions
- Rinse your millet and quinoa under cold water, and place into a saucepan. Add in your measured water, and bring to a boil. Once boiling, lower your heat, add a lid and bring to a simmer for 10-15 minutes. You want to make sure all the water is gone! Remove from heat and remove lid, and place in the fridge/freezer until needed.
- In a large bowl, mix together all of your other salad ingredients. Mixing thoroughly.
- Whisk together your dressing ingredients until everything is well incorporated. Set aside.
- Add your now chilled grains to your salad. Slowly pour in your dressing, mixing along the way.
- Serve salad cold or at room temperature.
Make It This Way
Tweak this dish by adding in your own favourite fruits, nuts or dried fruit – get creative and use up what you have in your cupboard. We like the ideas of apples, raisins and walnuts!

I love how salads can act as a base to throw a bunch of vegetables and grains onto and make it your own and fit your different moods and styles, with summer coming up I love how this salad incorporates mangoes with the grains!

This is a great salad for the warmer weather with the bright mango and grains to make this salad feel more like a meal. It's also great to bring to a BBQ or potluck. This reminds me of a recipe straight out of Forks Over Knives: wholesome, healthy, and balanced in carefully chosen flavors. I have the book somewhere in my room and had TOTALLY FORGOTTEN ABOUT IT (!!!) Thank you so much for sharing this recipe with me because now I am going to dig the book up and look through it. I have not exactly been in a rut, but almost as the recipes I have been making have been rather similar & I am looking to spice it up a bit. Thanks for the help with that, NN!
