Healthy Apricot Bites

If you’re an on-the-go snacker, this is the perfect solution to your hunger. These balls only take five minutes to make – if you don’t have some stored in your freezer already – and they provide plenty of omega-3’s, thanks to the walnuts and the chia seeds offer a sneaky source of protein. The dried fruits even make them an ideal treat for when you’re craving something a little on the sweeter side!
- Gluten Free

Ingredients:
| ½ cup dried apricots | 2 tablespoon chia seed, ground | ¼ cup shredded coconut |
| 3 prunes | ¼ cup walnuts |
Directions
- Place all of the ingredients into a blender or a food processor. Pulse and blend until ingredients are broken down, a few minutes. Tip: This will be quite sticky, and dough like. If your mixture is too sticky, try adding a tiny bit of water or coconut oil.
- Using your hands, portion the dough out and roll into roughly 15 balls.
- Place on parchment paper and then into the freezer to harden for 5-10 minutes. Enjoy!
Make It This Way
Try adding a little dollop of coconut oil to add some extra goodness to these balls. Get creative – you could even add some ground flaxseed into this recipe for a rich dose of dietary fiber!

Store these bites in an airtight container in your fridge, or freezer. That way you will always have a healthy snack handy!



These healthy apricot bites are such a great idea for a quick and easy snack that is nutritious and sweet! The apricots give off such a nice flavour and the shredded coconut combined makes it really delicious combination too. I would have to skip out on the prunes because my stomach is a bit more sensitive but this is such a good idea, especially for those who have a little bit more trouble going to the bathroom and don't want to have the flavour of prunes alone!
