Lemon Dill Beet Salad

Turn that frown upside down with this delicious beet salad. It doesn’t just brighten your day because of its refreshing taste; but just look at that colour - who can be sad when they’re eating a pink salad! We love the idea of pairing this with a fish dinner, or eating it as part of your lunch. You’ll enjoy the taste and your immune system will return the favour by keeping you happy and healthy! Ingredients:
| ¼ cup fresh squeezed lemon juice | 2 tablespoon raw pepita seeds | 3 raw beets, peeled and finely shredded |
| ¼ cup fresh dill | 2 garlic cloves | 2 medium carrots, peeled and finely shredded |
| ¼ cup fresh parsley | ¼ teaspoon sea salt | |
| 1.5 teaspoon extra-virgin olive oil | 1 cup cooked chickpeas |
Directions
- Using your food processor or blender, combine your lemon juice, dill, parsley, olive oil, seeds, garlic and salt. Pulse until you reach a smoother consistency, but not completely smooth – some chunks are okay!
- Next, add in your chickpeas and pulse a few times – you want to break them up into small chunks, not pulverize them.
- In a large bowl, mix together your beets and carrots. Slowly top with your salad dressing. Mix thoroughly.
- Serve in a bowl with a lemon wedge or topped with some lemon zest!
Make It This Way
If you are short for time, instead of shredding the beets and carrots, you could always cut them up into bite sized pieces – either way, the salad will still have the same great taste.
Make this dish even more colourful by using red and golden beets.

YUM! I love all thes things, lemon, dill, and beets! The earthy flavour of beets is so refreshing I find and a great addition to any salad to meal, I also love dill and it pairs so well with lemon. This salad looks delicious, as someone who loves salads but rarely knows what to put in them, this recipe was really helpful!
