Sweet Peach Overnight Oats

Enjoy the comforting taste of peaches and cream for breakfast, without even lifting a finger. We love the idea that as you are fast asleep, these delicious oats, which are packed with fiber will provide you with a healthy breakfast, one spoonful at a time. Enjoy the natural sweetness from the peach and banana, without even adding the extra sweetener if you prefer not too. With this fresh taste of summer first thing in the morning, you’ll want to enjoy them every day before work!

Serves 1
  • Gluten Free
  • Dairy Free
  • Egg Free
  • Sugar Free
  • Vegetarian

Ingredients:

1 peach, pitted ¼ cup uncontaminated rolled oatspinch stevia or other sweetener
½ banana, peeled 2 tablespoon chia seed
½ cup non-dairy milk ½ teaspoon pure vanilla extract

Directions

Before bed:

  1. Using a blender, mash up your banana and peach until it’s more like a puree.
  2. Measure out and add all ingredients into a large glass jar with a lid (a mason jar works nicely!) and shake contents so it’s fully mixed together. Leave in the refrigerator over night.

In the morning: For warm oats, conveniently heat them in the microwave for 30 seconds. Or, enjoy them cold and eat with a spoon directly out of the jar!

    Sweet Peach Overnight Oats

    I love peaches and overnight oats because they are so easy to make and so convenient! I usually put peanut butter and berries in my overnight oats and I am surprised I never thought to add anything else into them! I find you really only see the "traditional" recipes for overnight oats so it is so refreshing to see some recipes bringing out new ideas like using peaches in them! This looks so delicious, thanks for sharing!

      Peaches are delicious and like watermelon, are a staple summer fruit! If you want to enjoy this recipe in the winter months, you can opt for frozen peaches and reminisce about summer!
