Two-Bite Chocolate Chip Cookie Balls

Who said it needs to be a disc shape to be considered a delicious cookie – not us! These cookie balls will prove anyone wrong after just one bursting-with-chocolate-flavor bite! If that doesn’t satisfy your cookie critic, hit them with the health facts – these balls are free of gluten, dairy, nuts, soy and refined sugar, and there's also an egg-free option too. The chewy and buttery consistency almost makes you feel like you’re sneaking a taste of raw cookie dough (naughty!), when in fact you’re just indulging in a healthful ball of gooey goodness!

Ingredients:

| ¾ cup soy-free earth balance spread | ¼ cup egg whites or 1 egg (see option below to make this egg-free) | ½ tablespoon vanilla extract |
| ¼ cup raw honey | 2 tablespoon palm sugar or brown sugar | 1 cup big dark chocolate chips |

| ¾ cup brown rice flour | ¾ cup sweet rice flour | ¼ teaspoon himalayan rock salt |
| ¾ cup tapioca starch/flour/powder | 2 tablespoon freshly ground flax seed | ½ teaspoon baking soda |
Directions
Preheat oven to 350F
- In a large bowl, mix all of your dry ingredients together until thoroughly mixed. Set aside.
- In a separate bowl, mix all of your wet ingredients with a whisk, or to give yourself a break from elbow grease, use your electric hand mixer. Mix until well incorporated.
- Now combine your two bowls into one, making sure to add the dry ingredients slowly, and mixing along the way. Still using your arm muscles, toss in your chocolate chips and stir some more. Use your hands to mash the dough together if you feel like getting extra dirty!
- Using a spoon, or an ice cream scoop, spoon out a portion of cookie dough onto a lined baking sheet. Repeat until all dough is gone, making sure to leave a little space between each ball.
- Time to toss the balls in the oven and bake. They should take anywhere from 12-15 minutes. Once baked, remove from the oven and allow five minutes to cool before diving in!
Make It This Way
Make this recipe egg-free and vegan by substituting the egg with a flax seed egg.
Flax seed egg substitute: This measurement is good for replacing one egg
1 tbsp freshly ground flax seed
3 tbsp warm water
Mix both ingredients together, and allow roughly five minutes for it to sit before adding into the recipe normally.

Not a huge chocolate fan- that’s okay, more for us! Get creative with your main ingredient, by using raisins or by even adding freshly roasted almonds, hazelnuts, pumpkin seeds or coconut flakes.



This recipe for two bite chocolate chip cookie balls reminds me a lot of edible cookie dough! It is so soft and chewy yet the perfect baking time to make sure you do not get sick from eating it as actual raw cookie dough! I love how they are convenient bite sized portions as well, its so easy to eat a ton of them but that's okay too, I love chocolate chip cookies and they are one of my favourite kinds to make so I can't wait to try this out!

Of course I remember my Mother's cookies! But, I had forgotten about the doughy little cookie balls that she would make for my little Brother, who had and still has quite a few allergies. Seeing this recipe brought back that warm memory...the recipe that she used here was so very similar, too, down to the Earth Balance!!! It has been a long time since I have had cookie dough balls despite the fact that cookie dough is one of my favorite flavors so...next time that I make cookies for my coworkers, I think I might have to make them cookies! :) Thank you for the good memory and inspirtation!
