Whole Wheat Spaghetti with Feta and Butternut Squash

If you love the tastes of autumn then this dish is for you! With the wholesome tastes of roasted squash, the nutty taste of pumpkin seeds and the saltiness of feta, this pasta has it all! Making the switch to whole wheat pasta is most certainly more healthy, and although this pasta isn’t drowning in sauce, it tastes so good you won’t even notice. Not to mention, there’s no need to wear a bib while slurping it up – especially if you’re wearing white!

Ingredients:
| 1 cup butternut squash, cubed and peeled | 140 grams feta cheese crumbles | sea salt and freshly ground pepper, to taste |
| 1/4 cup extra-virgin olive oil, divided | ¼ cup toasted pumpkin seeds | |
| 1/2 lb whole wheat spaghetti | ¼ cup packed parsley |
Directions
Set your oven to 425F
- In a small bowl, place your diced squash. Drizzle with half of the measured olive oil, sprinkle with salt and pepper and toss to coat! Pour contents onto a baking sheet and roast in the oven for 20-25 minutes, flipping at the half way mark. Set aside to cool.
- Prepare your pasta according to the package. However, when you’re draining away the excess pasta water, safe roughly ¼ cup.
- In a large bowl, add in your pasta, squash and all other ingredients. Toss with your excess pasta water, and remaining olive oil and sprinkle with salt and pepper.
- Serve hot!
Make It This Way
Roasted butternut squash is naturally sweet, so you don’t need to add any sugars to this dish. If you prefer, you can always substitute it out for a different type of squash, like acorn!
Make this pasta gluten-free by using rice noodles instead.
You can also make this pasta dairy-free and vegan if you use dairy-free cheese.

Oh my goodness this homemade whole wheat spaghetti with feta and butternut squash looks absolutely delicious and amazing! I love how it is more light as opposed to the traditional sauces that can be heavy with cream or whatnot. I bet this would also taste delicious with butternut squash pasta as a substitute to the whole wheat spaghetti and topped with sweet potato too. I love this recipe and, NN, you are helping me out of a rut: so, the rut was that I have all of this spaghetti. I like yogurt pasta and pasta with veggie burger bits and pesto pasta & on & on & on...but by those pastas, I mean rotini. I have lots of spaghetti and for me the options for spaghetti are more limited: I really only have been doing lentil curry spaghetti and sometimes a hummus green lentil spaghetti. Thank you for a fresh spaghetti idea!: I always have plant-based cheese and squash around because I enjoy those things and this recipe is going onto my meals to make list :D
