Cool Dill Cucumber Salad
There’s something about a cool cucumber salad that just sounds appealing on a hot summers day. Perhaps its because it’s a refreshing way to stay hydrated – with the cucumber that is, or maybe its just because it tastes so good. But either way, with the goodness of kale and the protein of black beans, this salad dillevers everything you need.
Serves 2
- Gluten Free - Corn Free - Sugar Free
Ingredients:
- 1 cup cooked black beans
- 2 bunches of kale – yield 4 cups
- 1 whole carrot, diced
- ½ cup dill salad dressing
- ½ english cucumber, sliced with a vegetable peeler
- 4 green onions, diced
Directions:
- Wash and dry your kale, then proceed to tear into proper bite-sized pieces and place in a steamer. You want to steam them just enough that the chewiness is gone, for a minute or less. Dry and place in a large serving bowl.
- Mix in the remaining ingredients, adding your salad dressing last.
- Enjoy at room temperature or serve cold!

- 1 ¼ mayonnaise
- ½ cup sour cream
- 1/3 cup dill, freshly chopped
- 3 tablespoons lemon juice
- 4 teaspoons onion, grated or diced
- 3 garlic cloves, minced
- 2 teaspoons Worcestershire sauce
