Cool Dill Cucumber Salad
Updated Apr. 29th, 2024
There’s something about a cool cucumber salad that just sounds appealing on a hot summers day. Perhaps its because it’s a refreshing way to stay hydrated – with the cucumber that is, or maybe its just because it tastes so good. But either way, with the goodness of kale and the protein of black beans, this salad dillevers everything you need.
- Gluten Free
- Corn Free
- Sugar Free
Ingredients:
| 1 cup cooked black beans | 2 bunches of kale – yield 4 cups | 1 whole carrot, diced |
| ½ cup dill salad dressing | ½ english cucumber, sliced with a vegetable peeler | 4 green onions, diced |
Directions
- Wash and dry your kale, then proceed to tear into proper bite-sized pieces and place in a steamer. You want to steam them just enough that the chewiness is gone, for a minute or less. Dry and place in a large serving bowl.
- Mix in the remaining ingredients, adding your salad dressing last.
- Enjoy at room temperature or serve cold!
Make It This Way
If you have a secret dill dressing you love, go ahead and use it. If not, try this one below:
1 ¼ mayonnaise ½ cup sour cream
1/3 cup dill, freshly chopped
3 tablespoons lemon juice
4 teaspoons onion, grated or diced
3 garlic cloves, minced
2 teaspoons Worcestershire sauce
Try This
Top this salad with some fresh dill and serve with fish and chips instead of coleslaw for a change! The flavours pair together nicely.

This recipe for cool dill cucumber salad is perfect for the summer weather! I find that dill is such an underrated spice and is so delicious in just about anything! I also love cucumber salad so this is a wonderful combination to try. I love those little cucumber sandwiches too and this very much reminds me of those but in a deconstructed kind of way, without the bread and sandwich part. This looks delicious, thanks so much for sharing!
Hello,
Dill is underrated but such a delicious and fresh tasting spice. This salad is very refreshing and fresh, making a great summer recipe or to bring to your next cook out.
Have a healthy day!
I got onion from the compost this week in the Farmer's market and of course I got kale too, I have carrots in the freezer, I always prep beans for the week, my roomate was offering extra cucumber, and I have a bunch of dried dill because it is a spice that I really enjoy when I am in the mood for it...so, I have all of the ingredients to make this salad! I think I will be giving it a go, though I will be adding beans to be making it heartier and might also supplement with creamy vegan yogurt and plant-based protein pasta to bulk it up. Thank you for the fresh inspiration I have no excuse not to try!
