Ancient Grain Porridge

For those extra cold, winter mornings why not enjoy the hearty tastes of both millet and amaranth in this warm breakfast cereal! Mixed with your favourite superfoods, berries or nut butters, it’s the perfect combination to keep your belly full all the way till lunchtime. Never have enough time for breakfast? No problem. Make this porridge ahead of time and freeze into portion sizes so on busy mornings, all you have to do is grab and reheat. Why, that’s almost as easy as hitting the snooze button three times in a row!

Ingredients:
| 2 ½ cups water | 1 tablespoon blackstrap molasses | pinch of cardamom |
| ¾ cup millet | 1 teaspoon ground cinnamon | pinch of allspice |
| ¼ cup amaranth | ½ teaspoon pure vanilla extract | pinch of ground nutmeg |

| 1 cup non-dairy milk | ¼ cup currants | ¼ cup shelled hemp seeds |
| 2 tablespoons coconut sugar | ¼ cup unsulfured apricots, chopped |
Directions
- Rinse millet with warm water in a saucepan by using your hands to move the millet around. Drain and repeat a few times, until the water runs mostly clear (two times should do it!)
- Leaving your washed millet in the same saucepan, add in your water, amaranth, molasses, vanilla and your spices. Bring mixture to a boil, then reduce heat and bring contents to a simmer for 15-20 minutes. Cook covered for best results.
- Now that most of your liquid is absorbed, add in your milk and the remaining ingredients and stir until well incorporated.
- After roughly five more minutes, your porridge should have soaked up your milk and it will be hot and ready to enjoy!
Make It This Way
Make this recipe sugar-free by leaving out the sugars (blackstrap molasses and coconut sugar) and replacing them with a touch of stevia or nothing at all. The millet and raisin does have a natural sweetness that may be good enough on its own.

I have been trying to eat more fiber and filling foods in the morning now, at least on days that I will be busy, so this ancient grain porridge recipe looks awesome! I love that it incorporates molasses, which is an ingredient that I feel like I do not often see in recipes apart from molasses cookie recipes for example. I love the taste of it and would be keen to try it in porridge or oatmeal!

A great grain porridge is a classic; it sure beats bacon and eggs any day for a great morning start that will keep you on your toes and feeling in tip-top shape. This reminds me of a recipe from Forks Over Knives and the good news about this recipe is that from trying a similar recipe, I bet that it is just as delicious as it is nutricious.
