Coconut Apricot Cookies

If you’re a coconut lover, these cookies will be your new fave. With not one, not two but four coconut ingredients, these have to the most tropical cookies we’ve ever seen. Easily whip up a batch when impromptu guests arrive, and with the heavenly smell wafting through the house, they’ll almost think that you expected company. And after you serve them these cookies, you’ll have an even harder time trying to get them to leave!

Ingredients:
| 3 whole eggs | ½ cup shredded coconut, unsweetened | 1 tablespoon pure vanilla extract |
| ½ cup coconut milk | ½ cup dried apricots, diced | ¼ teaspoon baking powder |
| ½ cup coconut flour | ¼ cup coconut palm sugar |
Directions
Set your oven to 350F
- In a large bowl, mix your eggs, milk and extract together. Whisk until well combined.
- In a separate bowl, combine the remaining ingredients, mixing well.
- Combine your dry and wet ingredients together into one bowl, mixing regularly to avoid clumps.
- Using your hands or a spoon, portion out the dough into cookie-sizes and place on a pre-lined baking sheet.
- Place in the oven and bake for 18-20 minutes – they should look golden brown when they’re ready!
- Serve warm or store in an airtight container
Make It This Way
Swap out the dried apricots for any of your dried fruit favourites: raisins, cranberries, blueberries, apples etc. We recommend some dried pineapple if you want to stick to the tropical theme!

Dip these cookies in a cold glass of almond milk or a hot cup of tea for an extra special treat!

This reminds me of the "coconut delights" I would make back in my college days...it was such an easy recipe to throw together and the overwhelming flavor + creaminess & transportative nature of coconut...it was something else! The recipe I had was plant-based...this recipe could easily be plant-based (I suspect some oil/flax egg instead...) Anyway, this sounds like another delicious coconut dessert recipe and it brought me back to some very warm memories, NN; thank you for that <3 (I might have to bake up some coconut delights again!)
